What did you eat vegan today? (Version 2.0)

Brand new thread!

Here's what I ate vegan today:

B: Chai tea and a banana nut muffin

L: Fried rice with stir fried kale, broccoli, soy sauce and Sriracha

D: A big bowl of stew with lentils, barley, split peas, chickpeas, kale, broccoli, potatoes and carrots

S: Cantaloupe and more chai tea

B: Coffee
L: Tofurkey Sandwich + Tea
D: Mixed steamed veg, tofu, spinach and lemon stir fry + Tea
+Chocolate Soy pudding :D

Sounds delicious, but I worry that you didn't consume enough calories to maintain your weight and energy. Coffee for breakfast?

Please try eating a bigger breakfast. Take care of yourself brother.

B - 1/2 wholemeal bagel, scrambled tofu, pineapple juice

S - Toasted muffin with peanut butter and marmalade; apple

L - Leftover dhansak with a vegan sausage and banana; orange

S - Protein flapjack

D - Lentil, squash and apple stew with a wholemeal pitta&avocado

Lots of using up leftovers today. Have since been shopping:D

Breakfast: Two tortillas w/ Earth Balance, sugar, and cinnamon, and OJ.

Lunch: Taco Bell Bean Burritos w/o cheese and w/ mild taco sauce and a side salad with lettuce, green peppers, cucumbers, chickpeas, and Organicville vegan ranch dressing

Still at school; will think of dinner on the way home....

L: Huge salad with yellow peppers and poppy seed dressing, Sourdough Bread with Earth Balance
Strawberry-Watermelon Switch -- I love Switchs!

Snack: Blueberries

D: Haven't had it yet, but I'm going to make Homemade Chili from the "Vegan Diner" cookbook

I'm eating vegan about every other day and loving it. I'm actually not really thinking about it, but I know I need to read labels better on my intentional vegan days.

Breakfast: One piece of peanut butter toast, one piece of raspberry jam on toast, and two cups of tea :)

Lunch: Part of a frozen vegan pizza

I'm going to pop it in the fridge and heat it up after I get home from work tonight! I didn't have a bread pan, though, so I made lentil loaf bites in a cupcake pan. So excited to try it.

L - grilled Daiya on wheat bread with avocado, green salad with sundried tomatoes, split pea and kale soup

D - not sure yet

Yesterday:

B - cereal and soymilk with blueberries, soy yogurt with banana and walnuts mixed in

L - Gardein crispy tenders, lima beans with chard, vegan ranch dressing

D - Glass of chocolate soymilk

Day before:

B - bagel with peanut butter and walnuts

L - grilled veggie and black bean burrito, chips and salsa

D - leftovers

Sunday

B & L - vegan donuts

D - lima beans with chard, cabbage salad with blueberries, walnuts, drop biscuit

Sat

B - bagel with almond butter and walnuts

L - baked red potatoes, cabbage salad, crackers

D - beans, kale, carrots, biscuit, chocolate chip cookie

B: Green and lemon ginger tea, cantaloupe

L: Lentil, barley, split pea, carrot soup with rosemary and garlic

D: Rice noodles with garlic and sriracha (super boring unhealthy dinner because I'm poor until Friday

B - Toasted muffin with peanut butter and marmalade, pomegranate juice

L - Falafel salad wrap, guava juice

S - Banana and pineapple smoothie made with almond milk

D - Will be leftover roast veg and spicy chickpea quinoa, probably with a wholemeal pitta and houmous

S - Half a raw fruit and nut cookie

L - Sunflower mac, apple, the other half of the cookie

S - Flapjack

D - A few tortilla chips, pea and mint soup, toasted muffin with houmous and pickles, caramel Alpro pot

B: muesli with unsweetened almond milk and strawberry/banana/kale smoothie

L: wheat noodle mushrooms and veggie soup

D: mock mexican meat, refried beans, salsa etc great burrito night :) we used homemade vegenaise with lemon as a "sour cream".

Last two days...

B- cereal and soymilk

L- soy yogurt, walnuts, banana, blueberries

D- gardein BBQ chickn salad (lettuce, corn, beans, tomato, tortilla strips, cabbage), beer

B- bagel, peanut butter, walnuts, banana

L - green beans, grilled daiya sandwich with avocado on wheat, fruit smoothie

D- black beans and rice

Pre-run snack - raw fruit and nut cookie

Brunch - Pillowy pancakes (from theppk.com), two with banana, blueberries and maple syrup and two with lots of lemon juice and sugar (yep, I'm a pig! But I was making it up for pancake day when I was sick)

Afternoon snack - Chilli tortillas with cheezy sauce to dip in to, pomegranate juice

D - Will be tempeh chilli and jalapeno-scallion cornbread

Snack - blueberry juice (I always have juice at least an hour or so before I eat in the mornings!)

B - 1/4 cup oat bran cereal made with almond milk and sweetened with maple syrup. 2 cutie-style mandarin oranges

L - Homemade Soba noodle and spinach soup with tofu, kombucha with chia seeds

I'm not sure what I am planning for dinner yet but definitely something with lots of veg since I'm carb and fruit happy today.
