Here's what I ate vegan today: B: Chai tea and a banana nut muffin L: Fried rice with stir fried kale, broccoli, soy sauce and Sriracha D: A big bowl of stew with lentils, barley, split peas, chickpeas, kale, broccoli, potatoes and carrots S: Cantaloupe and more chai tea |
Breakfast:pumpkin oat bran with almond butter topping 1 slice alvorado street sprouted bread toasted 1 cup orange juice Dinner:blackbean burger,lettace,tomato

Sat at the NYC vegan eat up meetup.com group, another awesome Tofu Scramble at Sacred Chow! I have to learn to cook these... Friends had the Vegan French Toast which had this blueberry sauce, looked amazing, u can see in the background...

B - 1/2 wholemeal bagel, scrambled tofu, pineapple juice S - Toasted muffin with peanut butter and marmalade; apple L - Leftover dhansak with a vegan sausage and banana; orange S - Protein flapjack D - Lentil, squash and apple stew with a wholemeal pitta&avocado
Lots of using up leftovers today. Have since been shopping:D |
Breakfast: Two tortillas w/ Earth Balance, sugar, and cinnamon, and OJ. Lunch: Taco Bell Bean Burritos w/o cheese and w/ mild taco sauce and a side salad with lettuce, green peppers, cucumbers, chickpeas, and Organicville vegan ranch dressing
Still at school; will think of dinner on the way home.... |
B - rice cakes, chocolate spread, banana and sprinkled flax seed. (this is beginning to be a daily breakfast)
L - veggie chili and massive salad
S - lots of fruit
D - Veggie fajita, tortilla wrap. Gosh it was gorgeous. |

Just had breakfast, so: One hash brown, two veggie sausages, chips, one egg, three slices of brown bread, beans and tomatoes. |
Just had breakfast too!! I had a cup of raspberry tea with a sandwich filled with spinach, banana peppers & olives!!! <3 YUM! |
Breakfast: One piece of peanut butter toast, one piece of raspberry jam on toast, and two cups of tea :) Lunch: Part of a frozen vegan pizza Dinner: I just put this in the oven: http://theveganstoner.blogspot.com/2011/11/blog-post.html I'm going to pop it in the fridge and heat it up after I get home from work tonight! I didn't have a bread pan, though, so I made lentil loaf bites in a cupcake pan. So excited to try it. |

Yesterday: B - cereal and soymilk with blueberries, soy yogurt with banana and walnuts mixed in L - Gardein crispy tenders, lima beans with chard, vegan ranch dressing D - Glass of chocolate soymilk
Day before: B - bagel with peanut butter and walnuts L - grilled veggie and black bean burrito, chips and salsa D - leftovers
Sunday B & L - vegan donuts D - lima beans with chard, cabbage salad with blueberries, walnuts, drop biscuit
Sat B - bagel with almond butter and walnuts L - baked red potatoes, cabbage salad, crackers D - beans, kale, carrots, biscuit, chocolate chip cookie |
B: Green and lemon ginger tea, cantaloupe
L: Lentil, barley, split pea, carrot soup with rosemary and garlic D: Rice noodles with garlic and sriracha (super boring unhealthy dinner because I'm poor until Friday ![]() |

Pre-run snack - raw fruit and nut cookie Brunch - Pillowy pancakes (from theppk.com), two with banana, blueberries and maple syrup and two with lots of lemon juice and sugar (yep, I'm a pig! But I was making it up for pancake day when I was sick) Afternoon snack - Chilli tortillas with cheezy sauce to dip in to, pomegranate juice D - Will be tempeh chilli and jalapeno-scallion cornbread |
Snack - blueberry juice (I always have juice at least an hour or so before I eat in the mornings!) B - 1/4 cup oat bran cereal made with almond milk and sweetened with maple syrup. 2 cutie-style mandarin oranges L - Homemade Soba noodle and spinach soup with tofu, kombucha with chia seeds
I'm not sure what I am planning for dinner yet but definitely something with lots of veg since I'm carb and fruit happy today. |
I'm having a lazy lazy Sunday. For breakfast I had strawberry and banana soy milk smoothie. And a bit later a soy latte. For lunch I'm thinking I'll have a beautiful salad sandwhich with homemade hummus and a slice of redwood co. meatfeee cheat in ham style. (I've just discovered this). For dinner I'm thinking of making a potato and cabbage soup with carroway seeds.

Breakfast: ~Pineapple, banana, strawberry and soy milk smoothie with chia seeds.
Lunch: ~Brown rice and sauteed mushrooms, zucchini slices, and onion with a bit of leftover marinara mixed in. Bit of a hodge-podge lunch but eh, it was good. I wanted to use up that leftover sauce and the brown rice I had in the fridge before it went bad.
Snack: ~An apple and a spoonful of peanut butter.
Dinner: ~Vegan chili made with pinto, garbanzo, kidney beans, and some cashews. Turned out pretty good for a first attempt at homemade chili! |
