Mmmm, toasted sesame seeds and collards sounds so good! I may have to try that! I like to tear them and steam them also or add to a skillet with just a little water and some pineapple and tempeh and lightly cook for a breakfast. Sometimes I add cinnamon to them when I steam them. I too alternate between collards, bok choy, turnip greens, dandelion greens, and a few others with a high calcium content and relatively low oxalate content. I used to eat a few cups or more each day but have gotten lazy about it over the last year or so. I love to grow the collards because they don't take up a ton of space, they regenerate quickly, and they are a very hardy plant that lasts well past the first frost in my garden. I've been known to just chew on them raw but I like kale more for that. I can't get my husband to eat them at all unless I hide them in a thick stew or something. I think you have inspired me to get back to eating more of them!

Breakfast - Banana smoothie with oat bran, maple syrup, soya milk, ground flax and vanilla extract (tastes like ice-cream)

Lunch - Piece of homemade wholewheat apricot and walnut cake. Orange juice. Tangerine

Dinner - Pistachio crusted tofu steaks ('chickpea flour egg' = brilliant for coating*) with brown rice, green beans and sweetcorn

Later - Freshly made popcorn (our addiction at the moment). Sparkling grape juice



* For one chickpea flour egg, beat together 1/4 cup chickpea flour (gram flour) and 1/4 cup water

B: oatmeal, bowl of fresh strawberries and banana and ground flaxmeal over it

L: five raw collard leaves from my garden wrapped around a few dates and a banana for a sort of "hot dog" (if you have a great imagination lol); peanut butter on toast; More peanut butter with celery; almond milk

D: the last of my batch of homemade baked beans; homemade potato salad utilizing Hampton Creek's Just Mayo, with celery and onion mixed in there; almond milk

12 cup salad with romaine, alfalfa sprouts, homemade hummus, tomato, green bell pepper, purple onion, carrot, walnut, lentils

4 cups shredded collards with lentils, purple onion, and sesame seeds

whole wheat bread is rising, i'll have that later

and maybe some fruit for dinner, i have cantaloupe, peaches, oranges, gala apples, and honeydew.

I'm making cannellini beans in sun dried tomato pesto, with green beans and tomatoes now for next week.

MS: strawberry soy yogurt; whole wheat tortilla with peanut butter

L: kidney beans, brown rice, zucchini from my MIL's garden, chopped collards from my own garden, tomatoes, onion, and a splash of red wine vinegar over it all; almond milk

D: chickpea flour omelette with more of my collard greens, tomato, more zucchini, and salsa along with vegan parmesan sprinkled on top (ground almonds, nutritional yeast, garlic powder); almond milk; steamed beets also fresh from my garden with a splash of balsamic vinegar.

B: The typical breakfast smoothie, today with frozen bananas to make things even thicker and more delicious (like a chocolate shake!)

Post-Workout Snack: 1/4 cup of raisins

Lunch: A big bowl of jasmine rice, broccoli, peas, and some leftover tofu "tenders" that I reheated and chopped up. Seasoned everything with ground black pepper, a squeeze of lemon, and some nooch.

Snack Number 2: Carrot cake bar with a bit of cocoa powder. Later I had some "Trinity" kombucha. I only recently tried this, and I was surprised at how much I like the flavor!

Dinner: Baked sweet potato fries and kidney beans.

For Breakfast this morning I had my regular smoothie (banana, oat bran, flax, soya milk, maple syrup, carob powder).

My work lunch box has oranges and nectarines in it along with a Violife cheese and onion sandwich on brown bread.

Later for dinner we're having cannellini and green bean salad with sun-dried tomato pesto (which I made yesterday evening), alongside pan fried tofu steaks and a tossed green salad.

Breakfast was my usual carob and banana smoothie plus a glass of orange juice with fizzy water.

Mid-morning I had an apple and an orange.

Mid-afternoon I had a bowl of chips which I regretted as I seem to be going off rich oily things.

Late-afternoon I had two glasses of chocolate Rice Dream (I just had to finish the carton..) and now I'm not hungry so I may skip dinner and just have a late evening snack.

ETA: This evening I had a cosy bowl porridge for supper (rolled oats, filtered water, soya milk and demerara sugar)

Yesterday:

Breakfast was just a banana and some orange juice.

Lunch was cannellini and green bean salad with sun-dried tomato pesto, plus some little oranges and an apple.

Dinner was leftover beefless stew with carrots, onions, beans, new potatoes etc. along with a couple of slices of wholemeal bread and sunflower spread.

Afters I had brown rice pudding with soya milk, apricots and coconut


Today:

Breakfast was brown rice pudding with soya milk, apricots and coconut.

Lunch is more cannellini and green bean salad (the last of it now!)

Dinner will be almond crusted lemon pepper tofu (now being pressed; will be going in its marinade later) with watercress, brown rice, sweetcorn and more green beans.

Later I have sparkling rose grape juice and sun-dried tomato scones (if I want a savoury snack) or date and nut balls (if I want a sweet snack).
