B: my own recipe invention lol: blended canned coconut cream and Daiya cream cheese together. Ground some pecans and almonds in my Blendtec and mixed them with rolled oats and turbinado sugar. Chopped some fresh strawberries and added to a bowl with the vegan cream cheese/coconut mix, then added the dry ingredients and mixed it all together for a sort of makeshift strawberry shortcake like dish. VERY filling/rich and my inlaws who were visiting loved it too.

L: tortilla with peanut butter; two mangos (ate while doing a six mile hike)

D: finally gave the vegan Bocca chi*kn patty a try on a whole wheat bun piled with pickles I got from a local farmers market; bag of premade plain coleslaw salad mix with homemade tahini dressing over it; almond milk

Snack: popcorn and braggs while watching a movie

edit to add: I really liked the bocca patty and found it more filling than other commercial veggie burgers I have tried in the past

what was the texture like? I'm imagining like cream cheese frosting kinda like german chocolate cake topping? Sounds absolutely yummy!

How do you eat mangos on a hike? I struggle to eat one over the sink without getting all covered in sticky!

Boca chik'n has been with me since it came out. It's so good cut up warm on a salad. Try the spicy ones! I find them often for 2.50-$3.00 and stock up. Beats fast food take out!

Always have braggs and yet never had it on popcorn. I think I'll make some popcorn with nooch now..Don't have a spray for braggs...

edit to add: I really liked the bocca patty and found it more filling than other commercial veggie burgers I have tried in the past

That's ok lol. I cut up the mango ahead of time and unfortunately it wasn't as soft and ripe as I hoped it would be, but this made it easier to eat on the trail. I kept the slices in a ziplock bag.

The cream cheese/coconut cream mixture was more wet and creamy than a typical frosting and not very sweet since I didn't add powdered sugar. That was exactly the effect I was after too. I didn't want it frosting sweet. And I wanted it easy to mix with the strawberries and oats. The nuts/oats gave it all a really nice crunchy texture too! It was probably one of the more fattening dishes I have made in a very long time, but it was well worth it for a treat! It has been so long since I have had German Chocolate style cake that I honestly can't remember what that frosting was like but I can sort of picture it and I think this was similar.

I like to use Braggs on popcorn instead of butter/salt. I like the kick that the Braggs gives it and yet still leaves the popcorn crisp.

After all that rich food on Saturday, I was a bad girl and fasted all day Sunday (just water, tea, coffee). Slaps self. I don't fast very often as it can become addicting for me.

Today:

Breakfast: Smoothie (almond milk, pineapple, frozen banana, collard greens from garden, pea protein powder)

MS: banana, canned pumpkin, cocoa powder mixed together

L: Homemade baked beans, steamed Brussels sprouts, polenta, almond milk

D: Can of chow mein veggies, chopped fresh celery, onion, and red bell pepper, and some chickpeas stir fried with homemade orange sauce over brown rice; almond milk

D: Sloppy Jo mix on buns (Rudy's brand buns). I make my sloppy Jo mix this way: cooked bulgur wheat, cooked red lentils, onion, green pepper mixed together with tomato paste, organic vegan catsup, red wine vinegar, maple syrup, garlic powder and salt/pepper. Almond milk to drink.

B: An all-natural bottled strawberry-banana smoothie (Bolthouse Farms brand) and 1/2 cup oats with cinnamon

L: Ate lunch at Whole Foods today as the family and I are returning from a vacation. I bought some Italian vegetable soup that came from a local producer that was absolutely delicious. As a side, I had a green leaf lettuce salad with raisins and a little spoonful of the buffet's quinoa-kale tabbouleh.

S: A homemade carrot cake bar. Snacked on a small handful of Snyder's Mini Pretzels also.

D: A heaping serving of baked sweet potato fries with cinnamon, black beans, and green peas. Its good to be home and back to my healthful routine!

12 cup romaine-based salad with sprouted lentils

8 cups cooked collard greens with sprouted lentils, onion, and walnuts

a healthier vegan brownie (subbed whole wheat flour for white, used 1/2 specified sugar and oil, added crushed sesame seeds)

whole wheat spaghetti with homemade sauce (tomato, onion, garlic, sauteed in olive oil with basil, oregano, nutritional yeast, crushed sesame, yellow split peas, hot sauce, crushed red pepper, salt, black pepper).

just realized that today was no fruit! egads. i need to go to the grocery store.

Too bad you don't live closer to me. I have a garden load of collard greens I will never be able to keep up with. I always plant way too much of those.

i love them. i can't grow them because my yard is too shady but i get them in 10-lb bags from the local grocer ($2.50/10lb bag, it's a steal). i tear the leaves off the stems and shred them, then either steam them on the stovetop or in the microwave. between myself and the 3 large dogs we go through this easily in a week.

when i was living with my dad (he grew them) i would alternate between his collards, mustards, and turnip greens. i made huge batches every day. he would complain (laughingly) that he had to visit the bathroom more often because i was cooking his greens every day and he was eating them with me in addition to his usual food.

at the grocer they sell the leaves when they are enormous but i like them better when they are young, small, and tender. i like them with crushed toasted sesame seeds, salt, pepper, and a little bit of red wine vinegar or lemon juice. they also go really well with my slightly cooked sprouted lentils.
