(yesterday)

B: One cup of navy beans and a tablespoon of blackstrap molasses; peach (I read somewhere that you aren't supposed to mix beans with fruit but it wasn't an issue for me)

MS: homemade tortilla and a glass of unsweetened chocolate almond milk

L: sweet potato, kale, black bean curry

D: whole wheat penne pasta with whole olives, fresh tomato, basil leaves, onion, black beans, and hummus; almond milk

pizza with sweet peppers, onion, jalapeños, chili peppers, and pineapple (I convinced the hub to make it pizza night after all!)

Breakfast: Glass of almond chocolate milk. Gardein mini chick'n slider.
Lunch: Roasted potatoes. Sauteed onion, chickpeas, green beans, and tofu.
Snacks: Two bananas. Crispy ground flaxseed green bean fries (baked). Sandwich with bacon tempeh and lettuce.
Dinner: Pasta with red beans and cabbage.

lentil tacos with shredded cabbage

cherries and almonds

Boca chicken patty for breakfast...on a whole wheat bun with pickles, onions, vegan mayo and sriracha.

1/2 of a scone from Whole Foods

Spaghetti squash with marinara sauce.

Earth Balance popcorn.

Plum

Red lentils in a Thai curry sauce with potatoes.

Daiya cheesecake.

Yeah...I'm happy and content.

Smoothie (strawberries, mango, collard greens, almond milk, Vega Protein powder)

L: tons of fresh watermelon; smoothie with frozen watermelon, peach, almond milk, maple syrup; peanut butter on 2 toasts

AS: chickpea mini quiche muffin (have extra ones stored in the freezer I made a few weeks ago)

D: broiled Portobello mushrooms, onion, and bell pepper with homemade bbq sauce over white rice; almond milk

Came down with my first cold/sore throat in over a year and I am bummed about it. I have been running around and traveling and doing too many things and haven't had a weekend to stay home in so long, so I guess my body is worn down. I craved fruit all day and probably ate several lbs of watermelon lol..

B Vegan pancakes (more like crepes) with sugar sprinkled strawberries and raspberries inside. Store brand vegan coolwhip. (A little dollop. Red white and blue.)

Lunch was mostly watermelon, and some hearty oatmeal date peanut butter bars.

Eating big on Independence Day.

Barbecueing black bean burgers, sweet and white potato wedges, tomato halves with spices, corn on the cob, Portobello mushroom caps, baked beans, fruit salad ( 3 kinds melons and berries). I have some nice hamburger buns and of course red onion, baby spinach, tomato, avocado and the catsups and mustards, etc. Also some mango frozen dessert that is vegan, haven't tasted it yet.

I live in a teeny rural town, and 4th of july is a big deal here! 3 days of events, culminating in the final big day.

breakfast- soymilk smoothie with rice protien powder added, coffee

lunch-slim pickings at the town-wide charity cookout, but I managed to make do with lay's potato chips, ketchup, a hamburger bun, and a hunk-o-watermelon (the chips, ketchup and bun made a makeshift sandwich)

mid festivities snacking- more lay's potato chips, lots of cherries and small peaches

dinner- bbq at a family members home. I had 2 grilled vegan burgers, sweet corn, grilled veggies,. and more watermelon.

Boy am I tired, its been a looooong day!

B - grape-apple smoothie with homemade protein powder and cinnamon

Then I had a late lunch/early dinner at my partner's family's house. It's the first time I've been to one of their gatherings and managed to stay entirely vegan. I brought beet and bean burgers for myself and his sister (luckily his mom had bought vegan buns!) I also had a lot of chips, salsa, guacamole, and veggie/fruit tray pickings.

Throughout the day I also had a bit of (vegan) cake batter and a few spoonfuls of frosting, but I haven't actually gotten to eat any cake yet. I'm getting ready to make a small avocado potato salad for a late dinner since I'm still a little hungry.

Yum to beet and bean burgers! What kind of beans were they? I have used black with beets before.

Isn't it nice to be able to enjoy a family gathering without the drama and actually get to eat great food! Glad it worked out with your partner's family, bodes well for future events.

My husband and I hosted an "Independence from America Day" barbecue yesterday.

Today's fare:

black tea with soya milk

two peanut butter sandwiches

strawberries

iced soya latte

pineapple

rice cakes

cinnamon raisin bagel

roasted potatoes, peas, vegetarian sausages, and stuffing with onion gravy (made by my lovely hubby)

pretty boring day of cookout leftovers- two standouts- silk unsweetened coconut milk with my coffee. So good! Dessert- italian ice with some fresh peaches added. Yay!

B: looked up the 'cakey vegan pancakes' recipe I posted, with some real maple syrup!
L: made enchilladas with Trader Joes soy chorizo, pinto beans, corn, onions, peppers, jalepanos wrapped in corn tortillas and baked with tomato sauce and chopped tomatos-and vegan mozzeralla
D: Another watermelon on it's way to going bad so I blended the entire half with strawberries and ice. had about 24 oz.
More of the enchillada mixture

What a yummy day for the family (my girls, ages 2, 5, and 8) ate the same thing:

BF: Cinnamon Apple Oatmeal Bake w/ freshly squeezed orange juice

L: Chickpea salad sandwiches with carrot sticks, grapes, and cucumber slices

D: Lentil loaf, whipped cauliflower potatoes and salad w/ homemade chocolate brownie chunk ice cream!!!

All vegan, all delicious!

I kicked off my return to veganism in style tonight at the Chicago Diner! (Took a five year detour but it feels great to be back.) I had ginger-lime seitan ribs, a smoked tofu club sandwich, a side of mac 'n cheeze and a slice of vegan chocolate mousse cake. Wish I could eat like that every day! (I'd gain about ten pounds a week.)

I had a bunch of junky leftovers today, and my body rebelled by running out of energy and falling asleep at 8:30. I think a lot of green juice is in the cards for tomorrow.

The recipe called for adzuki beans, but I mixed even parts adzuki, dark red kidney, pinto, and black beans.

It is really nice! I feel awful because his mom always makes me special dishes, which is so sweet, but then she always tops them off with cheese.
