Breakfast- Calcium fortified OJ with vanilla protien powder thrown in, a cup of coffee

Lunch- Soynut butter on 2 rice cakes, a red apple

Snacks- soygurt and almonds

Dinner- Crockpot veggie-bean soup. Had a few veggies that were looking iffy, so that means its time to make soup! LOL

MS: slice homemade whole wheat bread, more fresh pineapple

L: : cold wild rice salad (wild rice, walnut pieces, dried cranberry, celery, onion, raw spinach, maple/vinegar/mustard dressing); almond milk and a plum


D: Amy's bean/rice burrito; steamed brussel sprouts and mushrooms with homemade white bean mayonnaise/dip over it; almond milk

Lunch: Pasta. Vegetarian (vegan) scallopine.
Snacks: Kale, spinach, strawberry, and banana smoothie. Kale and quinoa bites. Sandwich with tempeh bacon, tomato, and lettuce.
Dinner: Rice, beans, and cabbage.

Ok I ate everything I listed above, and a whole loaf of potato bread with a large knob of vegan margarine. I got the new one smartbalance put out this year, and it was really good.

Just wanted to share that sometimes, I eat ALL.THE.THINGS. Even though I am a lady.

S: earl grey tea with soy milk (I drank a lot of tea today..)
L: super falafel!!! falafel in lavash with eggplant, potato, hummus, pickles, other vegan stuff
D: haven't had dinner yet but I'll eat leftover veggie fried rice

the falafel was so crispy, yummy, and flavorful. inspires me to try to make chick'n n' waffles with falafel-type thing, but with chicken herbs/spices. it can happen, people!!

Yum! I used to whip up sauces like that when I'd make a stir fry almost every night. I'm gonna put fresh ginger on my list or I'll forget...and more tempeh @meg moo - falafel and waffles sound great! Kinda rolllls off the tongue! I've done Boca Chik'n and waffles. I just bought maple syrup so Ima go!

Saturday

B: hot oatbran/cinnamon (two cups cooked); unsweetened SoDelicious coconut yogurt (guilty of eating the entire container) with flaxmeal

L: went on a long hard mountain biking adventure that turned into a nightmare with torrential rain and 51 F outside and made the mistake of making white bean dip/tomato sandwiches for it and ate 2.5 of them. For some reason they upset my tummy and I had diarrhea while out in the woods...three times. Yeah. Or it could have been the container of coconut yogurt for breakfast that was too much lol. Also had a peach, and two cliff bars while out there.

D: no dinner as I was recovering from hypothermia and an upset tummy. I did have a banana on the way home from our long drive and some hot tea. I was starving this morning even though it is really early, and couldn't sleep for the hip pain, so I just had tofu/banana/chocolate pudding. Today will be an easy day of no exercise or anything intensive. Ugh. Lots of hot bath time in store, and hopefully some recovery types of food.

So far just coffee but for dinner I'm planning fried asparagus in beer batter (does that negate the health benefits of the asparagus?) and will probably have veggie burgers with it.

B: oatmeal with peanut butter and chopped dates. Orange juice.

L: Thai restaurant food, spicy stir fry with lots of fresh veg and delicious white rice. Husband and kids had tofu with theirs.

D: Sweet potato with black beans, chopped sweet onion, and baby spinach wilted in olive oil.. Banana.

Date walnut cookie and chamomile hot tea.

I can totally live on bread, PB and bananas. Include soymilk somewhere in there, and I am a happy camper.

Breakfast-
blueberry smoothie with soymilk and rice protien powder, coffee

Lunch-
pasta salad with hummus and broccoli

Dinner-
spinach salad with cherry tomatoes, balsamic vinegar, and a veggie sausage

Snack-
a bowl of almonds and cheerios (dry) while watching netflix tonight, and some watermelon after dinner

Forgot to add- I take a multivitamin, and since going vegan, a flaxseed oil supplement pill. Just for peace of mind, and to have a simple answer to "but where do you get your omega-3's?"

Yesterday:

B - Carrot with houmous; baked beans, vegan sausage and a bread roll (campfire breakfast)
L - Granola, flax and almonds in almond yoghurt
D - Pad Thai with broccoli; chocolate pudding

So far today:

B - Smoothie (banana, mixed frozen berries, apricot, tropical juice); wholemeal toast with pb

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...
