stir-fried snow peas, sweet pepper, carrot, and onion with noodles in tomato soy sauce

S - Banana, nakd bar, bag of wholegrain crisps
D - Tofu, green bean, green pepper and broccoli Thai green curry with rice; vegan millionaire shortbread

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...

Lunch: Mushrooms in tomato sauce, 2 slices of bread and ''butter''
Dinner: Chick pea and Spinach curry, roti and salad


Snacks: 3 crackers, Jam toast, 5 biscuits, 1 banana I need to stop with the snacks....

Had to share! I had a lentil walnut burger (vegan). I got the recipe from veganhouse.org and it was to diiiie for!!!!

Dinner: Vegetable Pelau and calallalo - ''Peleu is a Caribbean dish made from rice, Beans (or ''peas'' ), onions, tomatoes, spring onions etc made in the same pot. The rice absorbs all the flavours. First time I made it without Chicken or Lamb and it came out really nice.
Snack: Toast, A Pear


Probably have another cup of tea I can guarantee it.

I shared the recipe in the recipe forum a couple days back.


But to make it easier I'll post it here we can all have a taste of the Caribbean in our homes!


This how I made it I don't measure but below is a ''professional'' recipe


Some (Maybe 3 cups) Basmati rice (or any rice)
Half an Onion chopped
2 Spring Onions sliced finely
Couple stems and leafs of coriander OR parsley
2 Garlic cloves, chopped
2 Carrots chopped
Tomatoes, diced
Scotch bonnet pepper (keep whole god don't chop it)
1 heap teaspoon of all purpose seasoning
1 Teaspoon of chilli powder
1 heap teaspoon of black pepper
1 teaspoon of All purpose seasoning
1 Teaspoon of garlic salt
Bay leaf
Oil
Dried thyme (fresh is best)
Half a cup of Kidney beans (or any other bean)
Vegetable stock cube
Coconut milk
Caribbean Browning - (its basically caramelised Brown sugar you can simply caramelise brown sugar while frying the onions but its hard to do it well...)


Boil the beans until soft set aside


Fry the Onions, Carrots, Garlic, coriander stems, spring onions etc until soft. Add a little Caribbean browning sauce. Now add the Beans alongside the seasonings and vegetable stock. add a couple tablespoons of coconut milk (don't overdo it) and the whole scotch bonnet pepper. Add a little water not a lot because you have to add the rice soon. (adjust to amount of rice) Now add the rice after a couple minutes place the lid on top to seal the pot. Use enough water for the amount of rice adjust the time to suit the rice.


Check seasonings and add the coriander leafs leave to stand for at least half an hour. Serve with well...ANYTHING!
The recipe may be a little different below but you'll get the same results.

l: snickerdoodle lara bar and bottled smoothie
s: banana, chocolate cashew milk (I just tried cashew milk for the first time recently and I think it's my new favorite)
d: enchiladas - corn tortillas, black beans, green chiles, onion, garlic, corn, spinach, tomato, avocado, can of enchilada sauce

I was supposed to go wild plant foraging with some people and they kind of ditched me. I thought I was too old to care, but, I kind of felt like I was twelve years old.

Oh well, I took one of my dogs to the dog park instead and had a great time.

Lunch: Toast, Pear
Dinner: Stir fry - This came out horribly yuck.


Today

Lunch: Avocado, Pepper and cucumber sandwich
Dinner: Jacket potato and avocado, Veggie sausages, Roast mushroom, long beans and tomatoes.
