Corn chips and a smooshed up avocado

Wasn't super hungry today but might make a quick veggie burger to eat while hubby and I watch TV later

salad with romaine, blackeyed peas, red onion, tomato, olive oil, red wine vinegar, walnuts

soup with kidney beans, kale, spinach, sweet potato, carrot, celery, onion, hot sauce, bay leaf, sage, cumin, red wine vinegar, olive oil. it doesn't sound great but it tasted great!

jazz apples

falafel burger with french fries

plantain chips with black bean hummus, salsa, and guac

(a lot of food today and a definite calorie surplus, but i ate out for dinner)

B - multigrain toast with almond coconut butter, coconut shavings, black berry jam, banana, and coffee
L - sandwich with avocado, cucumber, tomato, hummus, mustard
D - threw together a chili from 1 can black beans, 1 can kidney beans, corn, 1 can amy's veggie chili, 1 can mild green chiles, and put avocado on top. ate it with fried tortillas :3 yummy!! ~

L: I went to an incredible new vegetarian (mostly vegan) restaurant here in Vancouver called Meet on Main! We had corn fritters with cashew chipotle mayo, mac and cashew cheese, homemade ginger beer and cookie dough balls in a vanilla macadamia ganache for dessert. Incredible

D: Leftover mac and cheese from lunch and salad.

S: Two mangoes

no whey, one of these days you are going to just shock and disorient us by drinking lapsang souchong tea instead!

D: Chickpea snowpea curry with whole diced kohlrabi and siberian kale plants in, brown rice, green n white onion-thyme-winter savory-red habanero relish, sourdough flatbread, apple and grapes.

S: Mini-loaf of whole wheat sourdough raisin mint bread with blueberries and raspberries. [mint is taking over my herb garden so I'm being creative]
Perhaps cinnamon snowpea polenta too, if I'm not stuffed yet.

Prepared a decent-size bowl of bean medely (garbanzos, navy, white & cannellini)


Added sweet brown rice and shredded potato


Topped it off with a dash of low sodium soy sauce and tobasco.


Split it into two tupperwares to heat up for breakfast and lunch at work.

One of my family's favorite meals lately is black beans and rice, so that's what we had. It's easy, filling, cheap, and delicious! My son had three helpings!

I cracked open a coconut and dug the good stuff out of the shell. I put coconut, mango, banana, and ice in a blender and drank it out of the coconut shell :3 because I'm fancy. I paired it with potatoes, parsnips, and cauliflower and whole wheat bread.

B: Huge smoothie with two bananas, four dates, kale, macka, kacao, brown rice protein powder, blueberries, strawberries and pomegranate seeds. Yum!

L: Huge salad. Too many veggies to list, pear, walnuts, hemp seeds. Crumbled up a quinoa, wild rice and mushroom muffin and threw that in too. Dressed it with apple cider vinegar, lemon juice and pepper.

D: Brown basmati rice with adobo tempeh, peas, kale, mushrooms and onions.

Dessert: Brown rice mochi with maple syrup. Ate a nectarine while it was cooking.

Breakfast was not vegan today, still transitioning!

Snacks: Half an apple spice hemp muffin with almond butter
Sweet potato crackers with roasted red pepper hummus

Lunch: Bowl of Chickpea n' Rice soup (from Plant Powered Families cookbook - really good!) and an orange

It is still coming up on the evening here, but dinner will be Oh She Glows "Luxurious 7 Vegetable and 'Cheese' Soup" with homemade dinner rolls. Dessert is fruit
