B: pumpkin, banana, pea protein powder, cinnamon all mashed together.

ms: chocolate brown rice; apple

L: split peas, sweet potato, eggplant, raisins, onion, curry powder, cinnamon, and vegetable broth

D: baked sweet potato fries; steamed beet leaves; almond milk; and....

Experimented with chocolate pudding. I added canned black beans, steamed fresh beets, cocoa powder, splash of almond milk, vanilla extract, dash of salt, and some stevia to my blender and blended it until smooth and creamy. The texture was awesome, silky and smooth and deep dark red in color. Thick and creamy. But it was not sweet at all even with the stevia added and then I added just a touch of maple syrup. It still wasn't sweet enough but it was ok. Had a very earthy flavor but I still enjoyed it and I could taste the cocoa well. For me it was ok but if I made it for anyone else I would need loads more sugar to make it an acceptable dessert. I just don't like eating that much sugar. I'll bet adding canned coconut milk would have made it more rich and flavorful. I have made beet borscht soup with coconut milk before and that was pretty good. Maybe next time. Been craving chocolate lately. .

I hated custard as a child (I had a thing about slimy yellow food - butter, custard, mashed banana) but the vegan stuff is much more palatable!

Today

Breakfast: Coffee with French Vanilla Soy Creamer and a brownie from the Oh She Glows cookbook (kids are out of town so I can eat dessert for breakfast)

Lunch: Sandwich made with high protein bread (17g for 2 slices), avocado, tomatoes and cucumbers, and some pan fries. More coffee with soy creamer.

Dinner: Hasn't happened yet but I think it will be a veggie burger with avocado, tomato and red onions and a salad.

Lunch: Leftovers from yesterday's cookout (pictured)-- Gardenburger black bean burger, Chao slice, grilled veggies, and Prospect Park potato salad from the Veganomicon-- and tea

Snack: Big salad with spinach, cucumber, shredded carrots, black olives, slivered almonds, nooch and red wine vinaigrette

Dinner: Bean burrito with peach salsa, avocado, spinach, and Daiya.

Dessert: Strawberries

S: Saskatoons, bird cherries, blueberries, and a mini-loaf of raisin cinnamon sourdough bread with almond butter.

Gundruk tasting good was a nice discovery, I now have a gallon and a half! Yay spring :P
Saskatoons are a blueberry-like fruit that tastes like red apples crossed with peaches with a hint of pear, they ripened early
Bird cherries are like cherries but smaller, tarter, and free
This was the first time I ever tasted tatsoi, I will now commence in breeding them to be harvestable all the way through winter, lol

Some vegan/veggie food options from India which are part of our staple diet :

- Roti a type of tortilla made out of pure wheat flour which can be eaten with any mixed vegetable side dish. The mixed veggies are usually sautéed with mustard seeds & cilantro. Mixed spice powder is usually added in measured quantities.

- Puri a deep fried bread, the dough either wheat flour or refined flour is flattened much like a tortilla and deep fried in vegetable oil. The most popular vegetable accompanying this is one made out of peas & potatoes or boiled chickpeas (chhole).

- Dosa a crepe made of rice + lentil paste - served with mixed vegetables (anything goes) or with coconut chutney. Same crepe can be made out of pastes of semolina or wheat or lentils.

- Mixed veggie rice - simple enough mix carrots, peas & just about any dry vegetable one might like and give it a light sauté with minimal oil in a pan.

- Stuffed tortilla/roti - again quite simple, consists either of boiled mashed potatoes/ fenugreek leaves/spinach/cottage cheese etc.. add onion, garlic, spices, green chillies as per taste.

- Tomato/lemon/tamarind rice - This requires the respective essences to be added, sautéed with mustard seeds, flavoured with spices to taste. No additional veggies to be added.

- Poha or flattened rice flakes rinsed & sautéed (yes again) and appropriate flavouring added. Can even be taken with sugar tossed over it. Makes for a good breakfast as it packs carbs.

- Rajma chawal/dal chawal - Again quite simple, the first one is rice with red kidney beans stew and the 2nd one is rice served with split yellow lentils stew.

One can get the idea by now, the different types of vegetable side-dishes can go into the hundreds depending on which combination one likes and varies from region to region depending on availability. Cottage cheese is a popular alternative to potatoes in many Indian dishes as well, obviously this doesn't apply to vegans.

Varun, that all sounds delicious I love tamarind mixed into lentils with a chapatti to scoop it up.

B - Pint of smoothie - watermelon, strawberries, cucumber, water. Toasted crumpet with yeast extract and peanut butter.
L - Kale, artichoke and avocado with homemade spicy houmous; Nakd bar
S - Carrot with more houmous
D - Chickpea and aubergine curry with nooch; vegan cornetto icecream

Just got back from a three day camping trip so i am going to post what we had each day (the same thing for each of the three days):

breakfast: fresh mango; thick slice of homemade whole wheat bread with Daiya cream cheese; scrambled chickpeas; coffee

Lunch/snacks on the trail (or in canoe): cliff bar; raw carrots; pumpkin seeds; 4 medjool dates each

Dinner: falafal patties (from Fantastic World Falafal mix); fresh green beans; cubed russet potatoes...all of the items were fried in Earth Balance; almond milk

My omnivore husband included hard boiled eggs with his breakfast and dairy milk with his dinner, otherwise he ate everything I ate and no meat.
