Vegan cooking is not difficult, I promise! Put just a bit of time into learning, and you will be posting awesome meals in no time. Eating the same thing every day is boring, and eating a variety of different fruits and vegetables is best for health. Check out this site:

Breakfast - Green juice - kale, broccoli, zucchini, apple, grapes, lemon and ginger

Mid morning - 1 glass green smoothie - mango, mandarin, passionfruit and banana with spinach, flax and hemp seeds (also maca powder, spirulina and rolled oats)

Lunch - rest of the green smoothie

Dinner - homemade tempeh and veggie burger in toasted rye bread with homemade tomato sauce plus salad and avocado with homemade salad dressing.

Late snack - slice of toast with homemade almond butter

L - leftover pasta from yesterday with chili oil added (yum!)

S - strawberries, grapes, blueberries, and blackberries with vanilla custard

For breakfast I had toast with cinnamon. Lunch will be a chickpea salad sandwich, some raw veggies (broccoli and celery), and fresh fruit (strawberries, pineapple, and grapes). Dinner was going to be a nut roast with cassava on the side but I just found out my cousin is in town with her family and they want to meat us for dinner... at Famous Dave's. Anyone know any vegan options had a place like that?

3 bananas

12 cups salad: romaine, iceberg, tomato, onion, alfalfa sprouts, green bell pepper, walnuts, carrot, homemade hummus, olive oil, red wine vinegar, oregano, salt, pepper, italian parsley

about 6 cups of watermelon

tabouli: bulgur, tomato, onion, lemon juice, olive oil, salt, pepper, mint, italian parsley, about 2 cups.

white popcorn 1/3 cup in a paper bag in the microwave with 1 tsp peanut oil

light domestic beer!

hummus recipe: 2 drained cans goya garbanzos, juice of 2 lemons, 2 T tahini, a bunch of cumin, salt, pepper, and about 2 T olive oil.

i make it with less fat than what most recipes call for.
it's better with beans cooked from dried and more of both lemon and tahini but my kitchen is being reconstructed so i used cans this time.

Lunch - some sort of chickpea 'egg' salad. with cucumber, beetroot, yellow pepper, dark rye bread and salad leaves
I am unconvinced about the chickpea thing - I will try a few other recipes before abandoning the concept (this one was way too mustardy)

Oh and I'm mainlining tea - feeling under the weather and cold :-(

Snacks: Earth Balance puffs. I also spent most of the day prepping veggies to be fermented, so I snacked on a lot of briney cabbage and carrot sticks.

Juices: carrot apple, green juice, and half a shot of wheatgrass.

Also half of a green chia kombucha.

This is my first time posting here! I hope I followed the format correctly!

jessandria how do you make your cashew mayo? I usually make a mayo with avocado but it doesn't work well with everything.

So far I've had a chickpea salad sandwich and some grapes. Dinner will be a stir-fry.
