COFFEE and lots of it! I also ate about 3 carrots, 2 sticks of celery and half a cucumber in sliced veggies and dip for snacks. I ate a vegan and gluten free Mexican casserole for lunch.

Breakfast:

Green Smoothie (Ingredients: Spirulina, spinach, broccoli, kale, blueberries, coconut sugar, & water)

Rolled muesli with chia seeds, flaxseed meal, hemp seeds, dried cranberry, and coconut milk.

Lunch:

Three small tofu scramble wraps (Ingredients: Organic tofu, yellow onion, green pepper, turmeric, nutritional yeast, garlic powder, salsa, and daiya cheddar cheese.)

Mango GoodBelly vegan probiotic drink.

Dinner:

A slow-cooker blend of quinoa, mushrooms, carrots, pinto beans, black rice, lentils, and brown rice with romaine lettuce.

Coconut water.

This isn't all I've eaten, but I had some simple home-made lentil stew (or soup?) with my home-made whole wheat bread. Lately I've been getting a hankering for parsley, and I sautéed some garlic in a little oil, added a little water, and then a BIG handful of chopped parsley. I had this on plain macaroni as a sort of experimental chunky pesto sauce, along with canned tomato puree. Tasty. (Somewhere in there I nibbled a bit of vitamin B-12 tablet- I think I heard it was more completely absorbed in several smaller doses throughout the day...)

I need more variety.

D - Tortilla chips; huge salad made with kale, cucumber, cherry tomatoes, avocado, grated carrot, spiced chickpeas and edamame 'spaghetti' pieces.

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...
