Breakfast: Rice chocolate milk.
Lunch: Roasted mini potatoes. Chickpeas, green beans, and tofu.
Snack: Banana. Falafel.
Dinner: Homemade pizza (spinach, green pepper, olives, and mushrooms).

Dinner: Oranges
Snack: Oranges

It was a lazy day and we had a lot of oranges (If you didn't already guess) and I didn't feel like cooking or preparing anything. Decided to give my tummy a break and keep the food simple. I always feel great after mono-meals.

D. Garlic mash with veg spring rolls, green beans, sweetcorn, peas and carrots.
Snack. 1 crumpet with peanut butter and a bit of jam, smoothie made with strawberries, banana, walnuts, orange and oat milk

I made a large breakfast for my sister and me: fried potatoes, vegan sausage patties, tofu scramble, pickled beets and wholegrain bread.

Brunch: Scrambled chickpeas with sriracha sauce, onions, garlic, and nooch and vegan pancakes (both recipes from Isa Does It)

B: Green smoothie (kale, carrot, banana, blueberries, flax seeds, tahini, oat milk, various hippie powders I binge on everytime I go to a health food store)
L: 2 toasts with peanut butter and chili flakes, fried brussel sprouts and cauliflower, an awful green juice I made (hey, they're not supposed to taste great anyway)
S: Some dates and some dried cherries
D: Noodles with bok choi, sprouts, soy strips, tamari, lime ... an orange for dessert

I've been feeling down lately and I've not been taking care of myself. I want to do that more, hence the awful green juice for lunch

Yum, you ate well today! Wouldn't mind if I had joined you.

I had cashews, walnuts, strawberry Silk yogurt for breakfast. Gingersnaps and tea for morning snack. Black bean enchiladas (Amy's) for lunch. Not time for afternoon snack yet. maybe an apple?

Planning a nacho bar for dinner with a hot and cheezy (daiya) refried bean dip, salsa, and guacomole for dinner

I read a great book at the library about cooking for singles. It was a collection of essays and recipes in celebration of meals-for-one. Many authors included recipes and stories about mono-meals as you call them. Some days are like that!
