Breakfast: Flax & Spelt Toast with organic strawberry preserves, Tofurky tempeh bacon, and a glass of OJ
Lunch: Leftover lentil soup, two clementines, some red seedless grapes
Snack: Veganic cacao rice crisps with Silk almond milk
Dinner: Gardein chick'n tenders with Alexia house cut fries and Zevia (lemon-lime)
Dessert/evening snack: Flax & spelt toast with dark chocolate peanut butter

Lovely Sunday dinner yesterday. I spent the best part of the morning making a HUGE batch of vegan 'Haggis', which for the uninitiated is a traditional Scottish dish made from (here goes) sheep's lungs, sheep's fat, oats and spices all packed into ..a sheep's gut. I know doesn't sound terribly appetising, but it's a bit like a spicy sausage of sorts and quite popular.

The vegan haggis mixture was quite involved and included a heap load of good things: onion, carrots, celery, garlic, mushrooms, adzuki beans, split peas, pearl barley, chopped nuts, pinhead oatmeal, bay leaves, rosemary, allspice, pepper, nutmeg and vegetable stock.

I formed my tonne of haggis mixture into substantial haggis cakes or patties and froze the bulk of them, reserving a couple for the afternoon when we had our meal of pan fried haggis cakes, mashed neeps n' tatties, black Tuscan kale and onion gravy. Yum yum. So that's Sunday dinner for the foreseeable future sorted.

Actually it was yesterday, but for lunch....

Red beans and rice....

Taro root cut into squares......

A potato pancake....

Avocado slices.....

A plantain for desert.

It was at an Ecuadorian restaurant that I tried on a whim.

Some of the best food ever!!!!!

B - Granola, almonds, chopped apple, almond milk
L - Sweet potato, sunflower seed and date kofta with kidney beans and mixed leaves, tahini dressing; some of bf's fried potatoes (at a local vegan cafe)
S - Tortilla chips with hot salsa
D - Veg sausages, mashed potato and swede, broccoli and cauliflower 'cheese', veg gravy; Alpro dessert pot
S - Chocolate tea and several ginger spice biscuits that are just out of the oven and far too moreish...

It's food shopping day for me, so my options thus far have been less than amazing.

Breakfast- 1/2 cup (dry) plain oatmeal with home made oat milk

Snack- I used up the rest of the greens & veg in my fridge in one big glass of juice (which wasn't the most delicious I've had). At least I haven't wasted them and have room for after I go shopping!

Lunch- A cup of brown rice, 4 apples, 4 bananas & some jicama slices

Dinner- Haven't been to the store yet to see what's on sale and whatnot, but definitely something tasty! Also have some strawberries leftover, so I'll be making a small vegan strawberry cake with whipped oat milk topping and trying a new vegan cheezits recipe

Yesterdays stuff:

B: blended Tofu pudding (extra firm tofu, banana, pure cocoa powder, stevia leaves from my garden, splash of almond milk and cinnamon); cantaloupe

Lunch and snacks: homemade chili, garden salad, jicama, homemade energy bar (banana, oat, sunflower seed based)

dinner: chana masala (Post Punk Kitchen version) with zucchini, onion, and tomatoes from my garden thrown in over millet; almond milk

It's freezing here right now in Minnesota and the chili really hit the spot!

B: Coffee with coconut milk creamer. It was new and I had to try it - I like Silk's soy creamer a lot better, but I usually drink my coffee black anyway.

L: Two onigiri (rice balls) stuffed with what could be loosely interpreted as vegan tuna salad (chick peas, veggies, veganaise, mustard, nutritional yeast)

And the plan for later:

D: Vegetable fried rice with bok choy served in thickened no-chicken broth

S: Either leftover vegan-tuna-salad-inspired-stuff or roasted potato wedges. Or maybe both - dinner will be pretty light with all the veggies.

I went to a vegan restaurant for supper and took a picture of my food. On the left is baked falafel with kale, tomatoes, onions, cucumbers, squash, and salad greens with hummus and tahini; on the right is black bean soup with whole grain bread. So yummy!

Since I have been doing as much raw as possible, I ordered a spiralizer.

My lunch was my first raw "noodle" dish! Spiralized zucchini noodles with a raw garden veg sauce. I think this spiralizer is going to be my new best friend! I love pasta!

B: A fresh orange and a glass of soymilk

s: Tempeh salad with chia seeds and home made vegan mayo dill and a hint of lemon

L: Tofu stir fry with rice noodles and a home made sauce of teriyaki, soy sauce, fresh squeezed juice of an orange, agave nectar and ginger, served with rice noodles. It had carrots in it too!

Haven't had din din yet.

I had a whole bunch of physalis for breakfast And some rice crackers with peanut butter; and a cup of tea.

Lunch is going to include some apple slices dipped in tahin, some dates and probably more rice crackers.

Dinner will be Gado-Gado, an Indonesian vegetable dish with spicy peanut sauce

It is officially apple-time here. We don't have many local fruits in Indiana, but if I go a day without eating apples for the next month it will be a miracle. They are just soo cheap this time of year.

L: red lentil dahl; pear; mashed sweet potato and pumpkin with cinnamon and stevia; water

D: chickpea flour omelet with fresh basil, celery, and tomato; steamed frozen mixed veggies; all with nutritional yeast sauce poured over; almond milk

Not sure what it was but I had the most awesome energetic workout at the gym yesterday, just exploded with energy. Every once in a while I have days like that.

L: Field Roast burger with Vegenaise, guacamole, ketchup and sriracha. I've been stocking up on Field Roast while I still can and it's such a treat.

D: Another burger...

S: Raw key lime pie cheesecake and a raw brownie! Went to a vegan event where they were selling desserts. Also some alcohol.

It was a thoroughly unhealthy day but hey it was Saturday, I regret nothing!

L: grapes, apple, snap peas, red beans/tomato paste/salsa/red pepper dish, tortilla with spoonful of sunflower butter

D: Millet with fresh apple compote and sunflower seeds mixed into it; almond milk

I've been eating a little less and working harder every day at the gym and walking on all my breaks at work. I'm having a hard time standing my body right now. :/

I often read your meals and think they sound delicious and healthy and that I should eat more like you! I know food has been a struggle for you but you know that you need it to be strong and healthy and to be the best person that you can. I hope that your brain gives you a break soon and that you can start to enjoy meals again and the beautiful body that all that vegan goodness is giving you x
