We didn't wind up going out, so I made spaghetti with lentils and tomato sauce for dinner, then had the leftovers for lunch today. Other stuff:

B- waffle with cinnamon-raisin peanut butter, rice milk/coffee smoothie
S- snap peas
L- leftover spaghetti with lentils, yellow pepper slices, 1/2 apple
S- watermelon, pumpkin seeds
D- probably sticky rice with veggies in stir-fry sauce

Yesterday's menu:
Glass of OJ before leaving the house


B: 50oz of Green Smoothie. Celery, spinach, flax meal, plant based protein powder, 5 bananas, cup of blueberries water

S: fruit salad. 4 Cara Cara oranges, 2 green kiwi's, 2 tomatoes

L: Banana wraps (8 bananas, half pound of romaine lettuce)

S: Handful of dried apricots

D: Mango salsa with 10 sprouted corn tortillas. 1.5lb of Mango (after peeling and seeding) 2 tomatoes, 1 English cucumber, 1/4 red onion, 1 green bell pepper, 1/2 avocado, 1/2 cup salsa (I wanted to get the jar out of my fridge), lime juice, dash of cumin.

I woke up late. Had a glass of rice chocolate milk until lunch was done.

Lunch: Potatoes, broad beans, hearts of palm
Snack: Falafel, crackers with black olive hummus
Dinner: Rice, kidney beans, cabbage

D - lasagne (frozen soya mince, onions, garlic, tomatoes, herbs, soya milk bechamel with bay, lasagne verdi pasta, nooch) and a green salad - yum!

D: 3 burger buns with pb and some vegan cheese, an apple and some rice milk

Pms big time, hence the burger buns Also, just bought autumn apples that are so crisp and delicious. I could seriously eat only apples right now.

Lunch: Raw collard green wrap, and salad (chickpeas, quinoa, lentils, cherry tomatoes, in a spicy lemon dressing).
Snack: 4 falafel balls, and a banana
Snack 2: Banana, and a cleanse juice.
Dinner: Tomato rice, grilled Portobello mushrooms and asparagus.

snacks throughout day: 2 homemade black bean chocolate energy bars, a coconut yogurt, figs, mango, and celery with peanut butter

dinner: garden salad with a tahini based dressing; two slices homemade bread with applesauce spread on top; almond milk

I love this; my mom used to make me applesauce sandwiches when I had a tummy ache. I still love them, especially on a hot day.

this week

this week so far:
I have been eating lots of bananas, applesauce, canned peaches, fruit juices, and melons throughout the day and for dinner having rice with some type of vegetable or legume.

(yesterday): applesauce (breakfast), 7 banana smoothie with blueberries (lunch), beans/peppers/corn over rice with salsa and guacamole served with lettuce (dinner, 4 bowls)
(today): applesauce (breakfast), 7 banana smoothie with strawberries (lunch), beans/peppers/corn over rice with salsa and guacamole served with lettuce (dinner, 4 bowls)

Well, I ruined a perfectly good 1/4 of a particularly difficult watermelon today after slicing open my finger. Not so "vegan" after that :/ The other 3/4 not tainted by my bloodied finger made a delicious watermelon celery juice

In another hour or so, I'll be starting the BBQ "chicken" we'll be having for dinner, made out of vital wheat gluten, organic whole wheat flour and spices To be served with quinoa and red cabbage. YUM!

Near East quinoa blend of rosemary & olive oil tossed with Beyond Meat chicken-free strips. 26g protein with just 1/6th of the bag of CF strips when combined with the quinoa.

I looked up Gallo Pinto, and it sounds like it would make a great brunch with scrambled tofu (I read that scrambled egg is traditional.)

Yesterday:

B - coffee

L - rice and bean salad (brown rice, red kidney beans, peas, sweetcorn, French beans, spring onion, finely chopped chillies)

D - smokey white bean stew (white beans, potatoes, onion, celery, parsley, chilli powder, smoked paprika) with savoury straws (wholewheat flour, dairy free margarine, rosemary, sage, chilli powder, nooch)

S - spicy potato wedges
