I spent the night at my parents' last night so I could go to a mother-daughter lunch today, and ended up not eating anything at home today. I was happy that I had plenty to eat while I was out and about though!

Breakfast (at my mom's): blueberries, a tangerine, and two cups of coffee

Lunch (at the mother-daughter event, which was a fiesta theme with nachos): A baked potato with salsa, and tortilla chips with salsa and olives

Dinner (at a local pizza place): Pizza! Thin crust, extra sauce, eggplant, onion, and a ton of basil

Snack (at a local self-serve frozen yogurt place): strawberry-kiwi nondairy yogurt with kiwi, blackberries, and mochi bits

B: half a tub of plain coconut yogurt mixed with blueberries and a chopped bosc pear; pot of earl grey tea with soy milk

L: salad of romaine lettuce, spinach, cucumber, orange bell pepper, avocado, dried basil & half a tin of kidney beans drizzled with balsamic vinegar

S: two black plums; iced coffee with almond milk and organic sugar

D: garden vegetable burger topped with tomato, red onion & yellow mustard on a sprouted grain english muffin; cauliflower florets and button mushrooms dipped in jalapeño hummus

S: mug of banana slices and raw almonds

An array of fruit (kiwis, blueberries, pineapple, strawberries), a bowl of mixed greens, a tomato, a quarter of an avocado wrapped in two lettuce leaves, a bowl of immunity soup, pea protein powder.

breakfast: a lot of oat bran with molasses; orange

snack: dates, almond milk

lunch: couscous with sauteed collard greens, cherries, and chopped almonds

dinner: homemade soup (white beans, carrots, onion, garlic, curry powder, ginger, nutmeg, water all simmered and then blended into a thick creamy soup); two Ezekiel whole wheat toasts with homemade almond butter; soy milk

Dinner: Black bean stew with turnips, carrots, celery, and dumplings

Dessert/Snack: sweet pickled peaches

For lunch I had rice cooked in coconut milk with cinnamon and raisens with sauteed kale and a pineapple spear.
For dinner I'm roasting mushrooms, peppers, onion and garlic for pasta. I found two opened jars of sauce in the fridge so it's pasta. Yeah, and it's white too!

Yes! I made them! They are very good, tangy and sweet. I didn't bother canning them since I planned on eating them right away. I simmered peaches in red wine vinegar, red wine, spices (cloves, cinnamon, black pepper), and sugar dissolved in water (traditionally this is made with honey, I think it would be great with maple syrup). I wasn't sure what to expect when I made them, I had never had pickled fruit before - they were great though, and my boyfriend requested I make them again next time we have peaches.

Vegan potluck tonight. We have them every 6 weeks or so on my tiny island. So I am making a cabbage salad with red and savoy, mixed with grated carrots and green onions. I am putting a lovely miso dressing on it and then throwing on cilantro and chopped up peanuts and raisins. I think it will be good.

I know everything else will be.

Not much so far: a simple muesli of oats and apple, and some dry-roasted unsalted peanuts, with water to drink. But lunch is going to be vegan pizza at a local vegan eatery. NOMNOMNOM!!!

EDITED TO ADD: Lunch was 2 slices of vegan Tempeh Reuben pizza, with a slice of coconut cake for dessert. And water to drink.

That does sound good! I just love fruit so much that it never lasts long enough for me to do anything that elaborate with it. Well, once there were sour cherries on sale at the local farmer's market and my eyes were bigger than my mouth. I decided I couldn't eat them all before they spoiled, even after I gave some to my friends, so I stewed and froze a lot of them. They tasted like cherry pie filling- quite good.

Went to an amazing Indian place! Had samousas stuffed with peas & potatoes. Dal & chickpea with pomegranate rub. It was to die for! I have a great picture of it but I only have quick reply choice here so I can't show you how amazing it looks. Sorry.

Can you list an actual recipe? Like amount of wine, vinegar, pepper ect? I really must try this. It's crazy mango season here so I want to try it with mangos instead but need proportions? Please with sugar on top?

Yesterday

Breakfast: potatoes with chinese cabbage and white beans in tomato sauce
In between: blueberries , 1 banana and peanuts, 1 tablespoon flax seeds grounded
Lunch: a big salad with all kinds of vegetables (lettuce, cucumber, red beet, carrot, avocado...) and a sweet potato in the oven
in between: apple, a little piece of chocolat, pecan nuts
Evening: rice with vegetables (zucchini, eggplant, mushrooms, curcimin, pepper and veg broth, green asparagus)
Some white tea with mint

B - slept in and didn't eat
L - Chocolate Bliss Soymilk
D - Vegan Schnitzel, an organic orange, a raw organic vegan protein bar, water, two raw vegan macaroons (strawberry white chocolate flavoured), a bit of Almond Brazilnut Cashew butter... then later, a bowl of oat grain mix, frozen blueberries and one banana with spring water, plus 1 piece of Vegan Chocolate.
not sure if I will eat anymore.

L - Sweet potato falafels and spicy carrot salad with hummus (at a new vegan cafe in town - the falafels were lovely but they hadn't washed the salad and it was really gritty - when I pointed it out they made the excuse 'it's the spices' - no, people, its mud.)
S - Piece of homemade teabread
D - Will be barbecue tofu, sweet potatoes and some sort of vegetable and bean side

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...

I love potatoes for breakfast! Sounds good with the white beans and chinese cabbage.
