- Glass of nudie juice - banana, chia seeds, cinnamon

B: Fried sweetcorn and onions (I know, weird for breakfast, but it sounded good at the time)

L: Whole wheat penne pasta with tomato basil sauce

D: Asian-inspired noodles with veggies and soy-chili-garlic sauce

S: Garlic stuffed olives - I smell awful after I eat these but they are too good to stay away from!!

That sounds like my perfect breakfast - but I've only ever seen plain English muffins and I'm in England. Not fair!

Lol. I just noticed the blueberry ones not too long ago at my local grocery store. I had always just eaten the plain ones before. The blueberry ones are so good they can be eaten by themselves.

I once made homemade crumpets after spending a ton of time tracking down crumpet rings. They were so good, but time consuming to make. I haven't tried making homemade english muffins yet, but if I ever get around to making a blueberry version, I will share it on VB.

Lunch: Spaghetti, mushrooms and artichokes in balsamic vinegar. Banana.

Snack 1: Chickpea flour pancake. Grapes.

Snack 2: Tempeh bacon sandwich with tomato and lettuce.

Dinner: Cannelloni filled with tofu, mushrooms, and red bell pepper.

S: I'm in the middle of a giant baking experiment so I'll be snacking on fruit and pastries all night. Yum!

wow, I havent had fried green tomatoes since the 90's, lol. I should do something other than pickling green ones this year.

B: Half bowl of left over gumbo with silage flatbread* and oatcake.

Thats it for today, its a holiday.

* Excess and 'substandard' garden greens can be lacto-fermented with, or without, salt and dried into a spice for sourdough bread. Its something to do with all those flavorful dark green cabbage plant leaves not connected to the head. An acquired taste I'm told.

Lunch: Homemade Szechuan tofu stir-fry (http://www.eatingwell.com/recipes/sz..._stir_fry.html) with white rice, Grape Zevia
Snack: Hummus with Stacy's multigrain pita chips, banana
Dinner: Pizza bagel (plain toasted bagel with organic tomato sauce and Daiya mozzarella, placed under the broiler for about 8 minutes)

Might have my last Caribbean fruit floe (Trader Joe's brand) for dessert.
