Breakfast: Cereal and a glass of rice chocolate milk

Lunch: Pasta with mushrooms, black bean and quinoa burger, and green beans

Throughout the afternoon between lunch and dinner: Chickpea flour pancake, banana, mushroom and lettuce sandwich

Dinner: Tomato rice, vegetarian (vegan) chicken breast, asparagus

 

After dinner, I'll probably have some melon.

Breakfast
- Takeaway medium soy latte
- Handful of unsalted cashew nuts
Snack
- Miso soup - 2 sachets
- Organic green tea
Lunch
- Big plate of stir-fried vegetables with chilli tofu
- Large fresh juice - orange, apple, celery, beetroot, carrot, ginger
Snack
- Organic green tea
- Handful of unsalted cashew nuts
Dinner
- Nandos veggie pattie & garden salad (lettuce, cherry tomatoes, capsicum and cucumber) with hot peri peri sauce
- About 5 chips
- 1/2 glass of freshly squeezed orange juice

Note: don't use the 3 beet sauce sachet that comes with the Nandos salad, packaging reads: contains dairy and egg.  The veggie patty is vegan (and is delicious!), however I had to check the UK site to confirm this.  The Australian site just said the Veggie Burger/Veggie Pita are not vegan (contain egg in the form of mayonnaise) which is confusing because people tend to call the patty 'burger'.

Breakfast: chickpea flour omelette with mustard greens, jalapeno peppers, salsa, nutritional yeast

snack: pear and almond milk

Lunch: black beans, millet, kale, orange all mixed together

snack: handful of whole almonds

Dinner: garden salad with romaine lettuce, tomato, cucumber, red bell pepper, olives, mushrooms, chickpeas, and tahini based dressing; cooked bulgur wheat with raisins, sesame seeds, and maple syrup; glass of almond milk

B: Huge green smoothie [oats, flax seeds, hemp seeds, soy milk, blackstrap molasses, romaine lettuce, kale, frozen blueberries and frozen mango]
S: Some almonds and walnuts
L: 4 pieces of crispbread with peanut butter and hummus, huge salad and pineapple on the side
D: Lentil, spinach and coconut soup with sourdough bread on the side

This healthy day needs some chocolate or something for evening snack!

I ate all vegan today! Pretty pleased with myself.

B: old fashioned rolled oatmeal mixed with cinnamon, a sliced banana & shredded coconut; pot of chai tea with almond milk

S: baby carrots dipped in crunchy peanut butter; a bosc pear

L: salad of green leaf lettuce, spinach, cucumber, yellow bell pepper, avocado & half a tin of chickpeas dressed with fresh lemon juice

D: garden vegetable burger topped with red onion, button mushrooms, pickles & bold deli mustard on a sprouted grain english muffin; container of cauliflower florets

S: americano misto made with soy milk; bowl of mango chunks and dark chocolate squares

L - sunflower seed vegan burger at my favourite veggie (well only) restaurant in town. It is my birthday and my friends are taking me out.

S - green smoothie

D - homemade veggie burgers (also on my facebook page) with all the fixings. I think some homemade fries would go well with that.

I'm horrible I know lol, but I'm better off with the food vendor on campus than the dining hall when it comes to filling up on the weekends. Plus, I don't feel like coughing and hacking in the dining hall when I can just crawl back into the comfort of my room and cry myself to sleep, replaying thoughts to myself of how it's just my luck that this had to happen to me during finals week, and thanking the good heavens above that I had a high enough B in my stat class to take the hit of the half attempted exam that I wrecked horribly.
