I love walnuts. I need to make meatloaf my next mission.

Coffee with creamer
Sandwhich with squirrelly bread, veganaisse, tofurkey, veganaisse and lots of lettuce because I thought I could use a salad but didn't want one.
Miso "broth"..just a spoon of miso in a mug with boiling water.
Chai tea and biscoff biscuits
All my St. Patrick's leftovers mushed up in a cast iron pan as Colcannon

L: chic'n salad sandwich with celery and spices in it on whole wheat bread
D: tofu scramble with onions red bell peppers and spinach and a side of three homemade brekky sausages (that are ten times better than any that I have bought)

Ok, I usually eat a bit healthier than this, but the faux sausages I made with a modified recipe were just plain awesome, and way better than how I remember the dead flesh versions...

Snacks:

- tried DRAGONFRUIT for the first time and it's delicious. But for $5.99 a fruit, I am unlikely to eat it ofter :)

- some puffed wheat

- blackberries

- slice of faux nacho cheese, tastes nothing like cheese but very very good

Nothing interesting for brekky and lunch today...

Dinner: "scoops" taco salad. Basically, tostitos scoops on a plate with a dollop of either Katie's super secret veggie taco meat or refriend beans placed in each one. Then a pinch of finely chopped spinach and/or broccoli followed by a dollop of salsa. Sprinkle nutritional yeast on top of each one then top with a jalepeno pepper. Also is a great appetizer for get-to-gethers.

Katie's super secret veggie taco meat: cook up boca veggie crumbles in a pan with some spray oil, garlic powder, onion powder and chili powder and pepper. Once browned, kick the heat off and douse with hot sauce and stir. Let sit for the hot sauce to soak in to the "meat". Yummie!

Nothing interesting for the first part of the day, but at night I came up with this fantastic "Thai Curry" recipe, here it is, if anyone wants to know :)

For a single serving (a HUGE serving or two small servings). I like to eat a lot at night.

- 8 oz shiitake mushrooms, chopped roughly

- 1 onion, sliced thinly

- 3 cloves garlic, chopped

- thumb size piece of ginger, chopped/grated

- 4 oz coconut milk or more if you don't mind all the saturated fat (the one in a can, an actual coconut milk, not the "breakfast cereal milk" that comes in a carton like my mother thought :))

- cup vegetable stock

- soy sauce (1-2 tablespoons)

- rice vine vinegar (optional) (1 tablespoon)

- lots of fresh basil

 

Saute onion, garlic and ginger until fragrant, add mushrooms, saute couple more minutes. Mix the sauce: coconut milk + say sauce + vinegar + stock, add it to the pot with mushrooms, bring to boil, reduce heat to low, cover and shimmer for about 10-15 minutes. Few minutes before it being done, add fresh basil. If you have the red curry paste, it can be added too. DONE! Serve over rice or couscous or pasta.

L-salad,cashews,apple

D-nacho bites its black beans along with black olives,corn,tomatoes.vegan cheese,liquid smoke and a bunch of taco seasonings stuffed in puff pastry,plus brown rice,avocado and some boca crumbles

I had a short, easy day today. All I've had is a PB&J sandwich and some corn chips and bean dip. I'm not exactly fasting, I just feel like I've been packing it in pretty good lately, so I'm slacking off the food a little bit, for a while.

B- Macro bowl with brown rice, barley, kimchi, steamed kale, nori, brown rice mochi. Topped with: umeboshi dressing and seeds (flax, sesame, pumpkin, sunflower) toasted in tamari.

S- Banana.

L- Quinoa and roasted veggies burrito on a sprouted grain tortilla. Veggies included: onions, garlic, butternut squash, cabbage, carrots, and zucchini. Added some chopped tempeh bacon to it too.

S- Salad with kale, spinach, dandelion, romaine lettuce in a sesame + ****ake mushroom dressing.

D- Haven't had it yet but will probably just finish up this left over granola/fruit bowl with almond milk from yesterday.

Eggplant and shiitake mushrooms Thai curry (with coconut milk, onions, ginger, garlic and veggie broth), OMG the most flavorful eggplant I've ever managed to cook myself, served over rice

 

Naked bar

 

Also, I am trying to taste foods I've never tried before at least every other day and today I bought Kumato - brown tomatoes and they are so much better than regular tomatoes, amazing taste! I highly recommend them, they are just as delicious as fruits!
