B- Carrot and gobo leaf oatmeal, its actually good :) [gobo root is a medicinal vegetable, the leaf is rarely eaten unless its a special variety (Ha Gobo), but this time of year its perfectly acceptable]

 

D- Lentil, chickpea, kale curry n rice with apple

 

Post run snack- Thick turmeric and pepper oatmeal with a banana

S: Peanut butter and a banana
D: Same as lunch but with cauliflower and an orange on the side

L: Whole wheat pasta with a tomato and red lentil sauce with vegetables and chickpeas.
D: Pea soup, 2~3 roasted potatoes, onion bagel (to dip in the soup), boiled and then sauteed collard greens.

B - Branflakes, sultanas, goji berries, almonds and almond milk

L - BBQ-ed marinated field mushrooms in a crusty bun, potato salad with peas, hummus and fresh fruit salad

D - Veg sausage and salad sandwich with chilli jam and mayo, tortilla chips, mint chocolate cookie

 

First BBQ of the year and it's March! Incredible weather for England :p

S- Blueberry raw bar, plum

 

L- 3 bean chili and chips

 

S- Raw chocolate covered mulberries, 6 sticks of celery, 1/2 a red pepper

 

1st Dinner - wholegrain couscous with vegan pesto, cucumber, red pepper and spinach

 

2nd dinner - wholegrain pasta with pesto and spinach

Lunch: Collards, brown rice, and buffalo "chick'n"
Snack: Sunflower butter with rice crackers

Later today
Dinner: I'm thinking either a light dinner of vegan chicken salad.
Who knows though, may end up making a tasty mushroom risotto.

B: A cup of oatmeal with maple syrup and chopped walnuts, & a huge green apple, - vanilla green tea

L: Pad thai and roasted seaweed -water

D: kale/pear smoothie

 

Snacks: Raisins and tea

 

Today:

B: Soy yogurt with a handful of Kashi cereal, agave nectar, & blueberries, and a green apple -water

L: Amy's veggie pot pie with salsa, I also had some plump grapes

D: Brown rice, Steamed asparagus, & a chunk or teriyaki tofu -water

Ended up going with a mushroom and asparagus risotto :)...it was a good choice and now I'm eating the leftovers for breakfast (^_^)

Woke up at 1, so no breakfast, haha!

 

Lunch: Coffee! and then more coffee!

 

Dinner: Irish stew leftovers from dinner yesterday - tasted so much better today after the flavors had a chance to develop, and it was good yesterday.

 

Desert: Half a dark chocolate bar

 

Second Dinner: Black bean and corn salad

 

And, I'm probably getting ready to have a snack. Love reading this thread - transitioning back to vegan and it's great to see what everyone's meals look like.

Yesterday

B- Half a can of pineapples and juice.

L-Grapes

D- Mashed potatoes with mushroom gravy, corn and tofurkey.

S- Grapes(Ate a giant bag of grapes that day)

 

Today

B- Oatmeal with some added apple sauce.

L- Giant plate of home made baked fries with a smidge of organic ketchup.

D- Burger made of grains on whole wheat bread with some rice and mushrooms.

S- Last few grapes, and a sorbet made almost entirely of pineapple.

L - Two slices of nut roast with lettuce, sprouted beans, roasted butternut squash and carrot; Clif bar

S - Tortilla chips with herby Tofutti

D - Stir fry of tempeh, sprouted beans, onion, yellow pepper, mushrooms, avocado and peanuts with fresh coriander and sweet and sour sauce; dark chocolate and vegan gummy bears

I made a vegan bowl for dinner, it was mixed grain base and then I sautéed some red kale, Brussell sprouts and avocado. It was soooooooo good!

I am home sick today with an unknown abdominal pain issue so haven't had much.

B&L - two cups of hot tea made with rice milk and organic turbino served with a peanut butter & honey sandwich on 7 sprouted grain bread. 

D- my hubby is probably going to cook since I am out of commission and I believe he is going to make a spicy potato and mixed veg dish served on pearl cous cous.

Breakfast: Homemade pumpkin doughnut holes (about 5) and orange juice

Snack: Organic honeycrisp apple

Lunch: Leftover cheeseless Papa John's pizza with mushrooms, green peppers, onions, and tomatoes, with Daiya mozzarella melted on top, sparkling water with a few drops of root beer-flavored stevia mixed in

Dinner: Leftover Gardein BBQ wings and homemade vegan mac and cheese, a banana, and a Zevia cola.

 

 

...Might have some popcorn and another Zevia later.

I'm doing my dinner-for-breakfast-and breakfast-for-dinner thang again...
 
Breakfast: brown rice with white beans, ground flax seeds, canned tomato, and Herbes de Provence
 
Lunch: leftover baked butternut squash and white potato; two (edible-but-quite-strange) vegan cookies I baked last night with the potatoes and squash.
 
Dinner: oatmeal with fresh apple muesli.

Peasant (1963-1972) and Fluffy (1970s?-1982- I think of you as 'Ambrose' now)- Your spirits outshone some humans I have known. Be happy forever.
