B - Homemade granola with soy yoghurt and red grapes

L - Bagel with veg sausages, orange pepper and chutney; banana bread Nakd bar

S - Crackers with chutney

D - Tofu and veg stir fry with rice; couple of Booja-Booja truffles

 

And I just had a yummy almond-milk hot chocolate with vegan marshmallows :)

L - Stirfried spring onions, carrot, pak choi and beansprouts with black rice noodles and smoked tofu

S - Mango chutney Graze box, banana and mixed berry smoothie

D - (will be) Indian food with friends :)

Brekkie - muesli with soy milk, glass of grapefruit juice, 2 slices of toast

 

Dinner (lunch) - 3 large portobello mushrooms brushed with sunflower oil and dark soy sauce topped with crushed garlic and fresh ginger. Grilled

 

Tea  - stir fry smoked tofu and veg with noodles and barley salad. stewed rhubarb and apple with swedish glace ice cream. Bottle of Rochefort 10 beer

 

Supper - Another bottle of Rochefort, pickled onions

L: Huge sliced apple with chunky almond butter

D: I tried these "meaty" taquitos from Wholefoods with homemade quacamole

 

Snacks: kettle popcorn with soy milk

Lots of water throughout the day

Dinner ~ sauerkraut with caraway seeds and apple sauce on mashed red garlic potatoes ....

B - Two spelt crackers with half an avocado (tossed in salt, pepper, chilli flakes and fresh lime juice) and some smoked tofu

L - Two more crackers topped with crushed chickpeas and a bowl of smoky split pea and carrot soup; chocolate ginger thin

S - Chocolate oat milk blended with banana and a spoonful of cocoa peanut butter

D - Stirfry with onions, beansprouts, pak choi and mangetout, soya pieces, peanuts and rice noodles; raspberry and chocolate Swedish glace

New Years Day

B: Pumpkin-multi grain pancakes with organic smart balance and cinnamon syrup. Lots of coffee and soy milk.

Late lunch: bhel puri, spicy okra chips, pappadams (with tamarind chutney, cilantro/coriander chutney, and smoked tomato chutney), chole. yellow dal.

S/D: 2 glasses of Columbia crest H3 red blend. Almonds. Tea and russian tea cakes.

 

Yesterday:

 

B: Leftover pumpkin-multi grain pancakes with organic smart balance and cinnamon syrup. Lots of coffee and soy milk.

L: Spicy rice noodle salad with diced peppers, diced tomato, baked tofu, lots of hot chilis, cilantro, chopped peanuts, brown sugar, soy sauce, vegan fish sauce, and lime.

S: A couple small slices of white alder vegan camembert, olives, and a glass of rabbit ridge rhone blend ($5 for 750 ml bottle!).

D: Alla Fiamma wood fired pizza:  san marzano marinara, chopped red onions, oil-cured black olives, and mamma lil's peppers. Pint of belgian pale ale.

 

Today:

 

B: Everything bagel with 2 365 (whole foods) sausage patties rolled in nooch, sliced tomato, schmear of punk rawk smoked cashew cheese, tabasco and ketchup blended in "just mayo". Lots of coffee and soy milk.

S: Empire apple and banana chips.

L: Leftover pizza.

D: Eastern bowl at sweet hereafter (http://hereafterpdx.com/). Pint of Double Mountain IRA.

S: Big glass of wine while we chill.

 

(Better half is out on school break so we are eating out alot.)

S - Hot chocolate oatmilk and a bourbon biscuit

L - Romaine lettuce, cucumber, red pepper and radishes with red quinoa, avocado and butternut-cashew sauce; persimmon

S - A couple of hazelnuts

D - Beans on toast with veg sausages; bananas with chocolate icecream (lazy dinner after a tough workout!)

B: banana, almond milk (my Trader Joe's cereal has honey in it, so not vegan). 

S: organic, non-GMO, gluten-free sweet potato tortilla chips, water

L: Field Roast Roasted Tomato slices and Daiya Provolone with kale on whole wheat bread; baked chips; clementine; water (well, the bread technically isn't vegan, but all else is).

D: Trader Joe's Thai Green Curry, tofu, veggies, and Forbidden Black rice.

B: Banana, a little almond milk. I usually do raw oats with almond milk but I was in a hurry this morning so I ate at work. 

L: Vegan peanut butter (peanuts and coconut oil? SO good), on bread I made and sliced myself. :) 

S: Banana

D: Last night I was trying to make veggie burgers; tempeh, black beans, soy sauce, mushrooms and onions, plus some of the vegenaise horseradish stuff. It was a bit too watery to mash into a patty, but it cooks up like a nice hash and I had that with some tinned spinach. It was good. I'm pretty sure I'm going to go back and eat the hell out of it.

L - Mixed salad with cannellini beans and butternut sauce; banana Nakd bar and a bourbon biscuit

Last night I baked bread and it didn't go so well. I mean, it's edible but I can do better! So, today I'm modifying my recipe and adding powdered flax (ground that stuff up myself) and cinnamon. It's not a sweet bread so I think the cinnamon will be fine with my veggie sandwiches that I love so much.

 

Today: 

 

B: Banana

S: Crackers

L: 2 peanut-coconut butter sandwiches

S: Banana

D: I'm still undecided! Think I'm going to do roast chickpeas and grill up some tofu, and maybe add some onions and some kind of vegetable; carrots or a frozen bag of mixed, I think?
