L: natural peanut butter and peach preserves on wholemeal bread; orange-banana-kiwi smoothie with oats and flax; potato crisps

S: steamed ear of fresh corn with lime, chipotle chili, and fleur de sel ; water

D: chili-garlic tofu with curried mixed vegetables; brown rice; pristine grapes; water

Ds: homemade brown rice pudding

L - warm salad at a cafe - lettuce, chickpeas, grilled pumpkin, avocado, cooked onion and cherry tomatoes with balsamic

S - organic sencha green tea, 2 small bananas

S - hommus and a piece of corn flat bread

D - taboulleh and brown rice

This is from yesterday.

 

Breakfast: Two slices of toasted Danish rye bread with hummus and dukkah.

 

Lunch: Beetroot, apple and kale juice with spirulina.

 

Snack: The best kiwi I've ever had.

 

Dinner: Puy lentil and chestnut mushroom lasagna. With spinach, caramelized onion and lots of vegan bechamel, topped with vegan bechamel too because you can't get any good vegan cheese here. Pile of raw baby spinach on the side.

 

Dessert: A bowl of vanilla soy ice cream, baked plums with cinnamon, marsala and vegan honey.

B - Chopped apple with cinnamon, granola, almonds and koko milk; smoothie (banana, pineapple,  lime juice, a spoonful of coconut milk and more koko)

S - Homemade gingerbread chocolate chip cookie, apple

L - Leftover macaroni cheeze with broccoli and cauliflower; crackers with peanut butter

D - Sweet potato, butternut and carrot soup with homemade rosemary bread

S - rooibos tea, vitamins and 2 avocado sushi handrolls with ginger and soy sauce
L - quinoa, tabbouleh, spicy cous cous
S - diet coke, half a cup of diced peaches
D - rice with stir-fried vegetables and tofu

Breakfast: Slept in, so I just ate a medjool date to get the energy to prepare my huge monster of a lunch.

 

Lunch: Two slices of wholegrain toast with organic baked beans, fried mushrooms and cherry tomatoes and blanched spinach. Sriracha on everything and a small glass of freshly squeezed blood orange juice.

 

Dinner will be something with chickpeas, maybe a curry or some chickpea and lentil patties with a salad.

 

I also made kale chips last night and bought some blood oranges, so I'll snack on those throughout the day.

D - Chickpea, lentil, kale, beet, and mint stew with rice, lavender scented sauerkraut for contrast, sourdough bread, and a apple

D - BBQ pomegranate tofu, coconut rice and a mountain of steamed kale; some dark chocolate

cereal with delicious home made almond milk(first time having cereal with home-made almond milk and it was FANTASTIC, unlike that gross store bought stuff)

bread chocolate hazelnut spread with banana

Juice

giant strawberry pineapple smoothie

I was surprised but i actually got my cals in from just this.. go figure

L - Leftover bbq tofu and rice, two crackers with peanut butter, Graze box of pumpkin seeds, cranberries and dark chocolate

S - Piece of rosemary bread

D - Pasta and chickpeas in tomato sauce with steamed broccoli, cauliflower and kale

Lunch: Spinach salad with sundried tomatoes, grilled eggplant and artichoke hearts. Olive oil and balsamic vinegar dressing.

 

Snack: Apple slices with cinnamon, raisins, walnuts.

 

Dinner: Leftovers from yesterday. Sundried tomato and basil lentil meatballs and tomato sauce with polenta.

 

Dessert: One of those fruit bar guys, blueberry flavor.

Am beginning to realise how similar my meals are on work days... hmm...

 

B - soy latte

S - green veggie juice (lemon, ginger, cucumber, celery, fennel, coriander, apple and spinach)

S - 2 avocado sushi with ginger and soy sauce

L - tabbouleh and quinoa mix with 1 cup brown rice, can of coke zero

S - dried cranberries, green tea

D - going to a friend's birthday (Italian) so will probably get a small tomato-based pasta and sparkling water

L: Fried tofu sandwich & a bowl of Amy's organic chunky tomato soup -water

D: A bowl of garlic brown rice/quinoa, veggie mix, & "chicken tenders"

 

Snacks: Roasted seaweed!!! LOVE seaweed

I made pizza on whole wheat pitas with tomato sauce, Daiya mozzarella, Tofurky pepporoni, Red onion & pickled jalapenos with a little paprika and red chili flakes. Right now I am having dried figs. Tried to use what I had on hand that was quick and easy. I haven't been feeling well the past few days.

Those pizzas came out pretty awesome. I love pita pizzas (bagel pizzas rock as well)

Fishless tuna salad on rice toast.

Breakfast: A small bowl of oatmeal with apple slices, half a teaspoon of peanut butter, ground flax, raisins and ground cinnamon. Black coffee.

 

Lunch: The last bit of lentil meatballs with whole wheat pasta.

 

Snack: Masala chai with soy milk, two really juicy dried figs.

 

Dinner: Will be a big arugula salad with grilled polenta, roasted butternut squash with sun dried tomatoes, pine nuts and balsamic vinaigrette. 

 

I bought some interesting sugar free organic fruit popsicles, so I'll probably have one of those for dessert.

L1: leftover curried vegetable lo mein; Granny Smith apple

L2: white fiber spaghetti with homemade walnut-nooch "cheese"

S: banana

D: I'm attending a grand unveiling of a new store, so I'm going to scope out the veggie offerings. 

 

If I get hungry later, PB and cherry preserves on wholemeal bread it will be!

Breakfast: Same as yesterday, oatmeal with apples, flax, raisins and cinnamon.

 

Lunch: Had a very odd improvised lunch. A wrap with herb and tomato Streich, baby spinach and some leftover butternut with sun dried tomatoes that I fried with some garlic and nooch. It ended up tasting like.. Pizza? Guess I'll have to experiment with making cheese sauce out of butternut squash.

 

Dinner: Dinner will be a rice noodle stir fry with bok choi and fried miso and garlic tofu. Probably loaded with sriracha. 

 

Don't know about snacks yet, I might make some popcorn later or even bake something.
