B: about 1/3 of a loaf of good Italian bread with avocado
L: rice, microwaved with fresh broccoli, and I added 1/2 can of low-salt white beans (I think that was about 5-7 ounces of beans).
D: a BIG serving of my home-grown butternut squash, with roasted unsalted sunflower seeds and some roasted squash seeds.

Water to drink with all of this.

I think I need more variety, although I'd say that what I eat is usually quite healthy... and I'm all out of oats, my most favorite breakfast food.

I made it, this is the recipe I use (we like this one quite a bit). It is a bit of a faff to make, so I don't make it all that frequently, but like a lot of the stuff I cook, it serves the two of us for four weeks (I cut it into 8 slices, serve two and then freeze the rest in three two slice portions to reheat on Sundays. It's also quite calorific (nuts and pastry!) but I work it out by including plenty of veg and keeping supper light.

B - Fruit & Fibre cereal with soya milk

D - soya based sausages baked, new potatoes, steamed cabbage, steamed carrots, onion gravy


Yesterday:

B - Fruit & Fibre cereal with soya milk
L - Jam sandwich on wholemeal bread
D - wholewheat spaghetti with tomato sauce and soya meat balls


Today:

B - banana with coconut yogurt and agave syrup
D - Italian peasant stew with pasta and borlotti beans (yum yum yum!!)
S - muesli bars / not sure yet

My times are all backwards now because I've started working overnights, so I group things by time of day instead of meal.

7-11 am: an apple
2-5 pm: banana blended with soy milk, nutritional yeast, and flaxseed
5-9 pm: boca chick'n patty on whole wheat sandwich thin with avocado, a clementine
11 pm-7 am: salad of whole wheat angel hair pasta, cabbage, baked tofu, and peanut dressing, banana, orange, coke zero

Also the Cajun black eyed peas sound delicious. I never think to eat blackeyed peas except at New Year's.

I LOVE them, I do a big batch once every few months and freeze in portions. This is the recipe I use (it states it serves eight but probably does more):

Breakfast

Home made muesli (Adopted from famous Bircher-Benner clinic)
Soaked overnight: 1 tablespoon chia seeds, 1 tablespoon hemp seeds, 3 tablespoons regular (not quick) rolled oats and 2 tablespoons raisins. Cover with water.

Add in the morning one piece of ripe, diced fruit and two tablespoons of pumpkin seeds ground in a coffee bean grinder. You will not be hungry until lunch. Tastes good but looks ugly.

Finally donating blood today! (I tried one day and the bloodmobile had a problem and didn't show up, and then I rescheduled and woke up with a cold so had to cancel myself. Third time's the charm!) So I'm eating high iron foods today and getting lots of water.

7-11 am: tofu scramble with nutritional yeast, grape tomatoes, and lots of spinach, an orange
11 am (post donation): gala apple
2-5 pm: drink of soy milk, banana, nutritional yeast, and flaxseed
5-9 pm: lentil stew, whole wheat sandwich thin spread with avocado
9-11 pm: oatmeal with brown sugar, walnuts, and soy milk
11 pm-7 am: african peanut soup (made this last night and it's DELICIOUS: it's high calorie with the coconut milk and peanut butter, but completely worth it...I'll link the recipe in the recipe thread), 2 clementines, radishes, coke zero

Dinner: A favorite of George Bernard Shaw.
Brown rice with chopped nuts, vegan cheese, couple tablespoons tomato sauce and fried tomatoes on top. Whole wheat toast with mint chutney. (Of course Shaw used dairy cheese.) Getting some interesting ideas here, even after twenty years vegan. All look pretty well balanced.

And, yes, that's one of the reasons I like this thread. I'm a newer vegan but I always find something to inspire me. I'm going to make the cajun blackeyed peas in the next couple of weeks, and I never thought of topping toast with chutney, but I think it's a great idea.

5-9 pm: romaine spinach salad with an olive oil and red wine vinaigrette
9-11 pm: gardein fishless filets, baked potato wedges, ketchup

Not nearly enough fruit/veg and light on the protein, but every so often that won't kill me.

Today (planned):

2-5 pm: mushroom stew with onions, carrots, and red wine over garlic mashed potatoes, 2 clementines
5-9 pm: slow cooker white bean chili

Third meal: better than bouillon no chicken soup base, cooked with water, carrots, celery, onions, and garlic, saltine crackers

This thread is always pretty full of healthy eating, but I thought it might be useful for transitioners to show a less healthy day, and I have one planned for tomorrow, so here goes:

11-2: peanut butter and pickle sandwich, orange juice, baby carrots
2 - 5: chili dog made with Smart hot dogs, buns, and canned vegetable chili, topped with Go Veggie American cheese slices and red onions
5 - 9: shredded spaghetti squash tossed with homemade pizza sauce and boca imitation meat crumbles, spinach salad with mandarin orange olive oil dressing
9-11: drink of soy milk, nutritional yeast, and banana
