Breakfast: packet of oatmeal with cashew/almond milk mix, handful of mixed berries, and a scoop of vanilla plant protein

Lunch and dinner: mix of brown rice (cooked with green beans and kale), corn, lentils, and Beyond Meat beef crumbles, with soy sauce to give it an asian flavour.

Snacks: Popcorn

Yesterday:

B - bran flake and sultana cereal with almond milk
L - Jam sandwich on wholemeal bread (pure fruit blueberry jam)
S - an apple and a banana
D - Soya sausages, new potatoes, cabbage, green beans and onion gravy (had sausages twice in the same week )

Today:

B - bran flake and sultana cereal with almond milk
L - Jam sandwich (as above)
S - an apple and a banana
D - Stir fried vegetables with baked tofu and pineapple in a sweet & sour sauce, served with short grain brown rice (yumyumyum!)

This sounds amazing!

B: scrambled tofu with garlic, onions, green onions, and spinach

planned:
L: mushroom fajitas with red and green bell peppers, salsa, black olives, and tofutti sour cream in flour tortillas, honeycrisp apple

D: whole wheat noodles, sliced cabbage, and green onions in spicy peanut sauce, a pear

The apple actually puts me over my target calories for the day so I'll have to make sure to get some activity in. I can't sacrifice my honeycrisp.

S - an apple and a banana (I'm being really good about snacking on fruit this week)
D - Quorn fishless fingers, mashed potatoes and baked beans

@AspiringBuddha I'm trying to keep within a calorie limit too, recently I've found the easiest way for me to achieve that is by being very boring about my breakfast and lunch - keeping it routine. Think I've finally nailed it (fingers crossed).

That reminds me, I used to use a meal planning app to plan our monthly menus, must get back into doing that. I use Pepperplate and have found it helpful.

I'm going very slowly, but am happy with it. Roughly three stone lost overall from my highest weight - and more to go.

Not the healthiest day today...I got busy this morning and forgot to eat my breakfast before leaving the house. When I finally remembered it was afternoon and I'd been up for 7 hours, so I had to eat something right away before I got sick.

So...

"Breakfast": Taco Bell, bean burrito, fresco style, 7 layer burrito, no cheese or sour cream
Lunch: black bean burger on bun, tater tots
Dinner: romaine, spinach, tomato, and chickpea salad with homemade thousand island dressing using Just Mayo

B - Fruit & Fibre cereal with soya milk
L - pure fruit strawberry jam sandwich on wholemeal bread with soya butter
D - stir fried vegetables (onion, garlic, cabbage, carrots and mushrooms) with pineapple chunks and baked tofu over wholemeal noodles

It was cold outside today and I went super indulgent for breakfast: fried potatoes with onions and green bell peppers, with ketchup, AND my vanilla soy milk, banana, nutritional yeast concoction. Delicious!

Lunch: leftover couscous salad from yesterday, sliced avocado
Dinner (planned): black bean chili

L - Sandwich on wholemeal bread with salad (cucumber, lettuce, tomato) and sage & onion slices.
D - Lemon pepper almond-crusted baked tofu steaks, served with with boiled new potatoes, spinach, peas & sweetcorn
S - Muesli bar and elderflower presse

P - Prunes in juice (I love these they're really sweet and yummy)

L - Bread & jam
D - Cauldron vegan sausages (they're made of beans and vegetables, but I didn't like them much), served with rice salad (brown Basmati, cucumber, tomato, sweet corn, onion, capers, olives)
S - Muesli bar

Today

B - A banana and an apple
L - Wholemeal sandwich with 'Sage & Onion Slices', mustard and salad (cucumber, lettuce, pickled jalapenos)
D - Not sure yet, probably wholewheat spaghetti and homemade ragu sauce
S - probably muesli bars..
