Breakfast:
Forest fruit puree with crunchy muesli and vanilla soy custard, whole wheat toast with hummus. Tea

Lunch:
Tomato soup and toast with garlic oil, apple dipped in peanut butter.

Dinner:
Walnut ravioli with vegan red pesto sauce and roasted veggies

Banana ice cream for dessert

Lunch: Brown rice, red bell pepper, cucumber, spinach, and tofu topped with tahini sauce

Snacks: Half of a coffee cake muffin - Got sick of it halfway through; it was quite good, I just get sick of sweets and desserts fast.
Grilled toast with chao cheese and tofurky slices.

Dinner: Pasta with beans and cabbage

Today was a vegan festival, hence the odd foods

Lunch: Sauteed onions, chickpeas, and smoked tofu

Snacks: Crackers with hummus, grilled toast with chao cheese and tofurky slices

Dinner: Green beans and garlic rice

Was craving comfort food on this nippy day, so I steamed some frozen peas, tossed them in a bowl, added a handful of mung bean sprouts, some black pepper, turmeric, dulse granules, sea salt, and garlic powder and blended it with the immersion blender. It was delicious!!!! I think I'll call it my "smashed sprouts and peas, please" dish.

Yesterday (we decided to save fajitas for another day):

B: Sliced banana, coconut yogurt, maples syrup, cinnamon
S: Tofu berry fool
D: Quorn* Madras served with a pilaf made with red rice, black rice, brown basmati and peas) and spinach
P: Carob maple pudding over another sliced banana





*it's worth looking into Quorn products as they're increasing their range of eggless items quite a lot now, you can even get Quorn chicken nuggets, which everyone seems to rave about

Toast with almond butter
Bag of Gardein mandarin chick'n and whole wheat spaghetti with tomato sauce.
Smoothie -- a couple of bananas, a few dates, and some other mixed frozen fruit
Whole wheat tortilla wrap with hummus and lettuce

Probably rice with beans and cabbage later on for dinner.

Pudding was banana custard (made with almond milk)
Supper is wholewheat noodles & veggies dressed with soy sauce and sesame oil

Lunch: Sandwich of sliced homemade chicken-style seitan on wholemeal bread with sunflower butter, dijon mustard and loads of lettuce

Mid afternoon snack: couple of Nairn's chocolate biscuits and a coffee

Dinner: Baked marinated (soy sauce, lime juice, sriracha, garlic powder) tofu steaks with stir-fry of wholewheat noodles, onion, garlic, carrot, green cabbage, peas & sweetcorn

Breakfast: overnight oats with almond milk, flax and chia seeds, cinnamon, vanilla, agave, and fresh blueberries
Lunch: leftover Black Pepper Tofu Stir Fry with red peppers, baby bok choy, and coconut-pineapple sesame rice
Dinner: a bed of spinach with lemon whole wheat couscous, roasted sweet potato, roasted chickpeas seasoned w/ cumin/coriander/paprika, a tomato-parsley "salad", and tahini-dill sauce. IT. WAS. AMAZING.

Lunch: vegetable curry w/ basamati rice

Dinner: went to PizzaRev, got the double crust pizza on Tuesday special with red sauce, Daiya mozzarella, vegan sausage, mushrooms, black olives, green peppers, onions and capers. With wine.

Breakfast: two thick slices of homemade whole wheat bread topped with dried cooked white beans and blackstrap molasses; Matcha tea

lunch/morning snacks: mashed canned pumpkin and banana; kiwi; lentil vegetable soup; rice cakes with peanut butter

Dinner: wild rice, sweet potato, chopped onion, and homemade almond cream cheese all mixed together; roasted asparagus (with coconut oil); cashew milk

I made the wild rice over the weekend and simply peeled and steamed the sweet potato so this dinner came together very quickly. The almond cream cheese was simply blanched almonds, pinch of cider vinegar and lemon juice, pinch of maple syrup, pinch of salt and water all blended together in my Blendtec.
