I had a great Christmas dinner. The mashed potatoes and green beans were vegan. I made some falafel, dinner rolls, and gravy. There was also a vegan soyrizo stuffing and a spicy fruit & edamame salad that someone else made. Both were delicious.

snack: a banana, coffee with soya milk

breakfast: coffee with soya milk, sauteed tofu, cinnamon raisin bagel with peanut butter

lunch: soya cafe latte, vegetable sushi

dinner: pho (noodle soup with smoked tofu, broccoli, carrots, snow peas, and jalapeno)

dessert: vanilla soya yogurt

late night snack: hard apple cider, pizza-flavoured tofu fillets with spiralized courgette

I made some maple-glazed fennel seitan steaks served on herbed-veggies. WOW. That is going in to my rotation from now on!

Those are actually snow peas and I mean fennel seeds (that I crushed up in a mortar and pestle).

I should write down how I made that dish before I forget. It was an off-the-cuff "hmm what should I put in this" sorta dish.

This is what I ate today...I wouldn't recommend it, nutritionally speaking.

Breakfast: Wholegrain Rice with Quinoa with tomato lentals and chickpeas.

Lunch: Large bowl of Oatmeal with unsweetened soya milk with banana on top.

For Dinner: Baked potato chips with no oil, a vegan chickpea burger with lots of broccoli, cauliflower and carrots.

Snacks: Several oranges

It was good, but the phyllo sheets are kind of a pain to work with. I think next time I might just buy the little phyllo cups and put the spinach/onion/dill/mint/garlic mixture in those.

Yesterday:

B: apple, canned chickpeas

L: whole wheat spaghetti with marinara sauce, zucchini sauteed in olive oil

D: bean and rice burrito with lettuce, tomato, guacamole, and jalapenos

I'm trying to increase my fruit and veggie intake for the new year. Grocery shopping tomorrow!

So winding down my first day of eating vegan:

B: strawberry and kale smoothie, made with homemade almond milk with chia seeds and sweetened with 1 pitted date
L: kale salad with 1 small avocado, onion, cucumber and dressed with balsamic vinegar
S: a really thick mixed fruit smoothie (ate it with a spoon)
D: "Mexican" quinoa made with veg broth, mixed veg, black beans, chili powder and cumin. Also fried up some tofu seasoned with chili powder and cumin, garlic and put that on top - was REALLY good.
