Yesterday I had Chinese takeaway at my in-laws' house: tofu and green pepper in black bean sauce with vegetable fried rice.

Today:

coffee with soya milk

roasted cauliflower and lentil salad

soya cafe latte

Linda sausages, potato rosti, and peas

vanilla soya yogurt

sauteed tofu and mange tout

B: Whole wheat bagel with hummus; apple

L: none really. Spent an hour or so making my Sweet Potato Pineapple "donuts" with cornflour/almond meal (in the recipe section lol) for a vegan potluck and music event I am going to Sunday evening. And I enjoyed a few myself.

D: enchilada casserole: black beans, potato, green peppers, onion, cornflour tortillas in baking dish and topped with homemade enchilada sauce and daiya cheese shreds. I had this over a bed of romaine lettuce and turnip greens. Almond milk to drink.

B: summer squash sauteed in olive oil; a pear; orange juice

L: rice noodle salad with cabbage, red bell pepper, cilantro, scallions, basil, and mint in a peanut/soy/lime dressing

D: (planned) lentil tacos in blue corn shells with salsa and tofutti sour cream; jicama sticks; apple

Well, dinner didn't happen. I was feeling tired, so I just went to bed. LOL.

Now after reading silva's post, I have a taste for mashed potatoes today.

lunch: stir-fried sweet pepper, broccoli, mange tout, onion, courgette, and tomato with whole wheat pasta in satay sauce

second lunch: red pepper and sweet corn patties, potato rosti

dinner: gnocchi in tomato chilli sauce

4 large Japanese sweet potatoes with one cup coconut milk with carrots, cinnamon and pink salt (mashed potatoes)


5 bananas, 1/2 pineapple, 3 tbs hemp seeds, 1 tbs maple surup and 1 cup coconut milk and ginger (smoothie)


3 cups of white rice, 1/2 cup coconut milk 30 macadamia nuts, one cup of guacamole, and broccoli (don't know what this is call but it tastes good mainly due to fatty foods.

Japanese sweet potatoes-- large crimson skin and white flesh? I love those

B- oatmeal with spices raisens and some vanilla almond milk

L- broccoli and mac and nut. yeast cheez
grapefruit

D- the BEST extra wide rice noodles with baby bok choy, onions, orange pepper, water chestnuts and fresh ginger and garlic and chili garlic paste

I love wide noodles / pasta. I love pappardelle pasta for that reason. I get it only occasionally from Waitrose (UK supermarket) which is the only place I know of where I can get a wholewheat version.

Yes we do, but I'm a lazy shopper and rarely try different places.
I had a look online though, and they look worthwhile checking out more. A couple of nice Fry's bits in the freezer including the Polony which is great for loads of stuff. I can usually only get Fry's from Waitrose (which is the best UK supermarket for vego stuff)

Just got back from staying with my partners family out of town for the weekend. I always bring my own food for the entire trip and store it in several coolers. This is what I made ahead and had there:

Breakfast: whole wheat bagel with hummus; orange; coffee

Lunch: cold wild rice salad (with dried cranberries, chopped raw celery, apple, onion, walnut pieces, nutmeg, cinnamon, maple syrup); winter squash just plain baked with nothing in it (I LOVE squash as is). Almond milk

Dinner: whole wheat macaroni shells and steamed broccoli with sweet potato/tofu/nutritional yeast "cheese" sauce over it all; dessert was a raw key lime cashew cream pie with pecan/date crust I made for everyone; his Mom made me a nice garden salad (I ended up eating it with no dressing but the leaves were spicy and it had onion in it which made it good even without dressing) and cut up some raw veggies for me to munch on also, and I got to taste hazelnuts that came straight from the north woods in Northern Minnesota.

Here is a pic of the raw cashew cream pie I made (would have been all raw except for the maple syrup I blended with the cashews):
