Well, today I made my own vegan pepperoni for the first time in preparation for making pizza tomorrow, but I couldnt stop gnawing on it I decided to make pizza tonight instead.

I learned a few things to do different next time. One, dont over cook the pepperoni/seitan while making it. It was a bit too hard, but still good. Two, use proper pizza sauce instead of fire-roasted tomatoes. They were too thick and watery and stole too much heat so I had to over cook the pizza a little.

Regardless, still very yummie!

I had some amazing mushroom fajitas on corn tortillas with black beans.

B: Tempeh, kale/bok choy, fresh pineapple all lightly sauteed together

L and D: Lots of crockpot chili (kidney beans, pintos, canned stewed tomatoes, fresh tomatoes, green peppers, mushroom, onion, bulgur wheat, tomato paste, chia seeds which thickened the stew nicely, cumin, oregano, chili powder); lemon soy yogurt bundt cake with lemon buttercream frosting; flaxmilk

I had a day last week when I had potato chips for lunch and tortilla chips and pickles for later. Some days are like that. I wouldn't recommend making habit of it though!

B: oatmeal with apples, cinnamon, brown sugar, and almond milk

L: salad of romaine, orange bell pepper, tomato, green beans, dressed with wasabi hummus (so good!); vegan immunity soup

D: nothing...lunch was really filling and I worked all evening, and now I'm just too tired to mess with it. I drank water and diet pepsi at work if that counts.

D: couscous topped with frozen heated mixed vegetables and peas and some organic lemon pepper added; steamed asparagus; fresh tomato with black pepper and parsley; flaxmilk

Just wanted to add what I had last night, cause it was pretty special.

My husband was nominated for Blogger of the Year and the award ceremony was at a fancy hotel in London. The caterers made vegan meals just for me.

I had:

a ton of wine

a delicious salad of rocket, cherry tomatoes, and radish

mashed potatoes and grilled vegetables

fruit salad

L: aloo gobi, chana masala, rice, small salad
D: chocolate banana smoothie

I was really looking forward to the lunch but was also a little stressed about it: meals out are the only ones where I have difficulty avoiding dairy products. But they couldn't have been nicer about it, explaining what dishes were vegan and that some dishes would be spicier without cream but could e made that way (which I actually consider a benefit: I love spice!) It was just a really good experience.

Then I worked all evening again. So. Very. Tired.

They do! On the whole, it's an okay effort--definitely better than Almond Breeze yogurt, but not truly tart and satisfying. I might try squeezing some fresh lemon into it and using it as a fruit salad dressing. Sometimes I just want something creamy, and this is that but it doesn't have the true yogurt flavor.

I answered your pickle question too. They are so yummy!

I really, really miss Trader Joes big container of soy yogurt! I can't even get Silk without going to the stores I dislike

Apparently it is...one of the stores I don't usually shop at has it on sale this week. They also have Just Mayo, so I might stop in there to try both of them.

The new "cheesier" Daiya shreds were at Sprouts today, but they were so expensive I couldn't make myself buy them. I got some slices instead.

then at work six mandarin oranges and a cliff bar.

on my way home I had to stop and get cashew milk and I was starving and never shop hungry *BAM* those crackerjacks looked vegan : sugar cookie cracker jacks
totally junk food, i know and I ate them in the car in the dark on the way home between street lights when no one would see my shame

then the rest of my homemade chili, homemade tofu sour cream.
