Oatmeal and a banana

Ate out with a Vegan Meetup and had the "Vegan Socialist" option which was a burrito with black beans, rice, cilantro, bell pepper; and some tortilla chips and salsa

Large garden salad with romaine lettuce, cherry tomatoes, red onion, button mushrooms, sliced cucumber, raisins, sunflower seeds, and peas and a squirt of olive oil; fresh pineapple on the side and almond milk

I had hot pot for dinner last night, and I absolutely stuffed myself with food!
I had:
- a few slices of turnip
- some romaine lettuce
- lots of different kinds of mushrooms
- a considerable amount of tofu
- big handful of sprouts
- a bowl of udon noodles
all of this was cooked in delicious veggie broth.

for dessert, I had a pear.

B - Pink grapefruit, one slice of toast with peanut butter and sliced banana
L - Sweet potato fries and a side salad (limited options at the pub)
S - Potato chips with homemade cashew cheese
D - Roasted parsnip, garlic and bean soup; homemade rocky road cookie

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...

I made my first attempt at homemade mac n cheese today...I went a little crazy with the spice in the recipe, but was able to save it by whipping up more plain nooch with the flour, almond milk and oil. I am amazed at the consistency, and the taste I think is more similar than anything I've tried that was restaurant or store bought.

I'm keeping this recipe.

B: old fashioned oatmeal with cinnamon, raisins, and soy milk; a gala apple
L: refried bean burritos on whole grain tortillas, topped with salsa, romaine, and avocado, 1/3 of a pomegranate, diet pepsi
D: african peanut stew with spinach over brown rice; red bell pepper; fresh pineapple

The peanut stew is from budget bytes, and besides being vegan and super affordable, tasted even better today than yesterday. I love that in a recipe!

That sounds really good.

I ate junk today. First I got stranded at a convenience store, then I spent all afternoon in the tire shop, then I didn't have my grocery list because my phone went dead.

B: roasted bell pepper hummus wrap on a whole wheat tortilla with baby portabella mushrooms and romaine; fresh pineapple
L: potato chips, 2 bananas, iced tea (QuikTrip didn't have many vegan options...)
S: tortilla chips, salsa, dill pickles (no reasonable excuse for this except I did need the salsa and pickles anyway)
D: ?? Either a salad or leftover peanut stew, probably, or maybe a can of lentil soup

D - Madras curry (onions, garlic, olive oil, chickpeas, mushrooms, spinach, potatoes, coconut milk, peas, Madras spice paste, tinned plum tomatoes) with wholewheat couscous
S - freshly popped salted popcorn

Today:
B - Alpro soya chocolate milk (there's a 4 for £4 offer on at ASDA right now - I'm also going nuts for the vanilla) banana; orange
L - Wholewheat penne with 'free-from' pesto, finely diced tomatoes, red onion and cucumber
D - Vegi Deli quarter-pounder in a seeded bun (with sliced gherkin, Plamil tarragon & chive mayo, pickled jalapenos, ketchup & sliced red onion) served with oven chips and peas

I made an alfalfa sprout salad with pomegranite carrot quinoa string bean sunflower seed. flax seed
dressing: olive oil little balsamic lota lemon juice tahini chopped garlic onion.
its great having the cooked quinoa on hand from the dog stew and the string beans u can just throw it right in.
My dog wanted it so baddd

I had Muesli with raspberries and almond-vanilla milk which was all sorts of yum, Granny smith apple dipped in peanut butter, a sliced banana, and a glass of a berry oriented Bolthouse juice.

I've been drinking some black coffee.

Not sure what I will have for dinner, but it is nice to think about what I am eating, and now who I was to be eating-- during the tail end of my days as a Carnist that weighed heavily upon me. I'm planning to whip out some Vegan versions of my favorite Italian dishes growing up though sooner than later.

D: couscous topped with curried pumpkin, peas, onion, garlic cloves, vegetable broth, and blended some sesame seeds and unsweetened shredded coconut to sprinkle on it all for a little crunch. Steamed some bok choy and added lemon juice on the side; flax milk

B: 2 kiwis and some peanuts

D: crispy tofu cubes with avocado and mango in a sweet chile-ginger sauce over romaine lettuce, fresh blackberries

The tofu recipe was from "Virgin Vegan: Everyday Recipes For Satisfying Your Appetite" and the texture of the tofu was so perfect I could hardly believe that I cooked it myself. I guess it makes sense considering the authors' first book was apparently "101 things to do with tofu."

D: wagon wheel pasta with summer squash and basil, in an artichoke pesto with a few squeezes of lemon. Not exactly seasonal but it all turned out really delicious.

I barely ate for the first half of the day, bad habit mainly. So, for dinner I cooked some Tempeh seasoned in cinnamon, soy sauce, and Orange Juice. I steamed some Red Quinoa with veg. broth, and then in coconut oil sauteed Kale, Butternut Squash and Carrots and added veg. broth/water to that. For dessert, Nicecream with Vanilla almond milk, raspberries, bananas, Macadamia nuts and Muesli.

Today was an odd day for me. I usually eat a light breakfast but this morning I made chocolate pancakes. I LOVE this recipe and it is one of my favorite pancake recipes:

At any rate, I made a vegan cashew cream cheese to spread on each pancake instead of syrup or fruit compote. It was very very rich and delicious. I had three of them. But then I lost my appetite for most of the rest of the day. I had a light garden salad and fresh pineapple for dinner. The salad irritated my sore throat. Or maybe it was the tartness of the pineapple.

I had: three bean chili with tvp and rice, and chips
and black bean brownies.
I work nights and I sleep all day so i've only been up awhile. But thats about all I'll eat between having gotten up and when I go back to sleep after I get off. I just graze. And I will go to bed as soon as I get home because I only have five hours to sleep until I have to get up and come back to work and it take me *at least* half an hour to get to sleep. *at least.
