So simple, super tasty.... whole grain flax wrap with outstanding homemade hummus, baby kale, and a mix of shredded carrot & chopped Roma tomato/red bell pepper.

Went to a vegan restaurant for lunch.
BBQ Sauce, Chickpeas, Black Beans, Waffled Hash Browns, Tempeh Ba'cun, Caramelized Onions, Pickles, Quinoa, Gaucamole, sautéed Mushrooms/ Spinach.

Two bean burritos, fresco style at TB for brunch at about 10... Then I forgot to eat until dinner and I made the most amazing garlic/onion/mushroom Alfredo on whole wheat fettuccine and toasted baguette slices with Miyoko's kitchen double cream chive cheese on it. It was soooooo goooood! Damn, that's a lot of starch! LOL

Two toasts with just a little bit of hummus (still worried with my digestive issues); orange; coffee

larabar; bottled water

ciabetta "pizza" sub: fresh ciabetta bread cut into a sandwich lengthways with tomato paste spread on it, sprinkled with chopped and sauteed mushrooms, green pepper, onion, black olives, splash of vinegar, garlic, fresh oregano and the subs toasted in the oven for a few minutes. I made some cashew parmesan (blended cashews, nutritional yeast, cornmeal, garlic powder, salt) and sprinkled just a little over the subs. Almond milk to drink

Finally starting to eat since my digestive system is getting back on track. Still feel weak, but Son is making me roasted potatoes and acorn squash, and I don't know what else. He is a good (vegan only!) cook and a great person. <3

That looks like something I'd love--without the avocado stuff.
I've found pickles make an amazing difference, and now keep bread and butter slices in my fridge.
Pickles, esp. dill, really compliment cumin!

L: I had lentil and bulgar kofta in a pita with pickle slices, onion and spinach

B: Farina with spices, raisins, and Trader Joes soy creamer. Good!

D: tofu with onions peppers and mushrooms

Lots of black tea--english breakfast, earl grey and chai

D: Kohlrabi and turnip greens chili with brown rice, hot peppers, fresh paprikas, boiled potatoes topped with chili paste, and my first ever beauty heart radish

S: Sweet peppers, grapes, brown rice with cowpeas and steamed carrot.

The beauty heart radish is a baseball size radish thats red on the inside. I'm glad I liked it because I have 200 more and am breeding them to last through the winter

Breakfast: toast made from my salt-free homemade bread, with vegan margarine- I think I had an apple or pear too.
L: what to call it?... Potato-Leek-Chili soup?... I cooked two potatoes with my last homegrown leek and a little vegetable oil in a little water, and added some of my pinto bean chili from the fridge when it was done. Cooled it right down to eating temperature- and very tasty!
D: more bread, fruit, and chili.

[Agronomy stuff]
'Beauty Heart', often called 'Watermelon Radish' in the west, is a chinese storage radish. They plant them in late summer and store the radishes for use throughout winter. Pink to red on the inside, white to green on the outside. Its globose and 2.5-4" in diameter (tangerine to large orange size). Its milder than spring radishes but still has some bite. The greens which seem to grow almost flat against the ground to reduce snow damage dont quite taste as good as spring radish greens when raw but fairly large quantities vanish into my chilli and curry just fine.
Storage radishes are good sources of vitamin C in the winter and both the greens and the roots are rich in healthy nitrates to improve your stamina when running, etc.

Just came back from staying with the inlaws out of town for a few days. As usual I packed all my own food for the weekend and this is what I had:

b: oatmeal, mango; coffee

L: bean and rice burrito; plain mashed sweet potato with spices (no added sugar or plant milk or fats); almond milk (also had a garden salad his mother offered me and had an orange/juice in it since she didn't have any suitable dressing)

D: tempeh, carrot, cabbage, onion, pineapple over millet; one of my homemade pumpkin donuts; almond milk (his mother also offered me some plain buttercup squash from her garden which was incredibly delicious cooked and eaten just plain with a few spices).

I premade everything for the trip and portioned my oatmeal ahead so I didn't have to spend much time in the kitchen other than heating stuff or cutting the mango. I always bring everything in a cooler so I don't take up space in her refrigerator either.
