I love wholemeal bread muffins. Dense in texture but moist like you say. I used to have them toasted with 'eggs florentine' on top. I've had them topped with just boiled spinach too, just a sprinkling of nooch to season. Also great buttered with marmite!

B1 - 2 cups of hot tea with soy milk and agave syrup
B2 - hot tea w soy milk and 2 sandwiches with guacamole

L - red beans, beefless ground, mushrooms, tomatoes sauce (+2tsp of flaxseeds). Salad - cabbage, cucumber, tomatoes, radish, cilantro (dressing - olive oil, lemon juice). Plus 2 slices of german bread.
D - I'm cooking right now spaghetti squash in the oven. It will go with tomato sauce. Meanwhile, I am drinking hot tea with soy milk.

I really like this topic; it gives me so many ideas...

I recently shared with my sister that I cook or saute a lot of vegetables, beans, and grains using vegetable broth or stock instead of stuff like vegan butter or oil. It adds a nice layer of flavor!

L: pear, pumpkin seeds, brazil nuts, homemade seitan nuggets with tomato paste cooked into them, steamed carrots and Brussels sprouts

D: succatosh (kidney beans, lima beans, orange bell pepper, onion, yellow squash) over white basmatti rice and a dollup of salsa; almond milk

Yes, it's a neat trick. I picked that up, when I read that Spanish rice is often cooked in broth, instead of water. I'm slowly learning how to cook.

B: blended block of tofu, banana, cocoa powder, stevia, pinch of salt

L: pear, pumpkin seeds, brazil nuts, homemade seitan nuggets with tomato paste cooked into them, steamed carrots and Brussels sprouts

D: steamed some cauliflower, tempeh, and kale in a steamer basket, then added it all to a bed of cooked couscous. I made a sauce using coconut milk yogurt, cornstarch, almond milk, lemon juice, garlic powder, black pepper, and parsley flakes heated on the stove until thickened, then added it to the tempeh/veggie/couscous mix. Had some almond milk to drink. The whole dinner took about twenty minutes tops to make, and about five minutes to eat lol.

Vegan pizza made from a ready made frozen tomato and basil garlic flat bread, topped with sliced mushrooms, jalapenos, onion, fresh tomato & green olives (very yummy indeed). Some dressed mixed salad leaves.

I highly recommend cauliflower "rice". I cut florets into small pieces (you may use blender), then fry it with coconut oil. Add some curry and salt. And when it's done, I mix it with nutritional yeast. It's so good! and healthy.
I marinated tempeh with soy sauce, apple cider vinegar, and a little bit of BBQ sauce.

Well, I'm currently baking enchiladas to be eaten later (they'll be vegan until I add the cheese for my buddy, but I always do a test-run. LOL).... Corn tortillas filled with (sauteed) mix of black beans, red onion, garlic, red bell pepper, shredded carrot, kale, chard, & baby spinach.... sauce made by blending my own homemade salsa & adding extra cumin.

Somebody should start a "What are you cooking?" thread.... I'd do it, but I'm busy cooking. LMAO
