B: Vegan chili

I think for lunch I am going to fry up some avocado slices and a bit of tomato and onion.

L: What I said. I have learned to LOVE a sliced up avocado, onion, and jalepenos fried up with some crushed tomato stirred in.

S: cashews.

D: Pasta and those gardein fish filets. Least satisfying meal ever. The fish was good, but I haven't had pasta in so long and forgot how quickly it makes you hungry again.

breakfast: russet potato fries (boiled, lightly floured and seasoned, then baked) with some ketchup... I'm thinking of getting some sauerkraut to eat my potato fries)

brunch: fresh popped corn! my husband and I went to a value village (thrift store) on his time out from the oil fields, and he bought me a cheap $7 old model popcorn popper because I don't actually /have/ a microwave. So happy to enjoy one of my favorite snacks again!

lunch: possibly a cereal... the husband bought a lot of fruit that he never even touched while he was out on his time off that I had to freeze to preserve and not let go to rot. So now I'm using them for plant-based milk by blending up a small handful with water.

dinner: something with rice, because I have a lot of left over rice from the husband's visit since we did a lot of chinese takeout, and I don't like letting things go to waste. @[email protected]

Red flannel hash (onions, potatoes, beets, and ketchup,) and some yummy water with lemon.

Lunch will be my vegan chili bowl again (guess I'm boring) with no cheeze this time.

Snack is cashews, as per usual.

1st Breakfast - green smoothi (frozen banana/pineapple, 2tsp flaxseeds, spinach, water)
2nd breakfast - creamy buckwheat (hot cereal) w/berries, agave syrup
Lunch - 3 sandwiches (w/veggies)
Dinner - plan to cook tempeh with potato pure.

Oh goodness, that pumpkin pie picture looked so delish.

Breakfast: I made a black bean soup that I decided to turn into a tortilla soup last minute by adding 2 tbsp of salsa to the mix and sopped it all up with some stale corn tortillas that need to get eaten.

Lunch: Moooore corn flake/all bran cereal mix with fruit milk. Eating it right now!

Dinner: Sweet and sour veggies with more left over rice. Hubby taught me how to make a quick S&S sauce with just a tomato, and a tbsp of rice vinegar, a tsp of sugar and fresh ginger to taste. I made it last night, and was absolutely in love with the taste!

Ugh. Way to go, now I'm craving Malt'o'Meal, which isn't a brand sold up here in Canada. Mum used to make it all the time with evaporated canned milk and brown sugar--I wonder how diluted heavy coconut cream would work to substitute the canned milk?

Also, god bless you; I could never get past the taste of flax seeds. Advent chia seed popularity was a godsend for me.

Sadrielle, just to clarify, my "Creamy buckwheat" it's just a name of cereal, - I have posted a link below to Amazon web site where I buy it.

So, it does not contain any cream at all, it's just crushed buckwheat grain. I cook it in water+ salt, then add berries and some fruits, and nuts. Sorry for confusion.

Today I ate a vegan dinner, it was delicious!

I fried white onion, apples, tofu and eggplant in oil with curry and chili. I also added some oat cream so it became more like a stew and I ate it with rice. Very yummy!

I'm sorry for the confusion as well, since I'm not sure you understood what I was saying. It looked like wheat cereal. It reminded me of a particular brand of hot cereal called malt'o'meal, which invokes child nostalgia. Mother always prepared that brand of wheat cereal, and she'd always top it off with evaporated milk and brown sugar. Then I mused to myself whether or not coconut milk could act as a substitute for evaporated milk taste. :P

I just dropped in to see what condition my condition was in.

B2 - oatmeal with berries and agave syrup ~1tsp
L - leftover from yesterday dinner (tempeh, potatoes pure), green leaves salad.
D - brown rice spaghetti with stir fried baby bok choy/mushrooms/tomatoes.
And 2 salads - beet salad (baked and grated beets, salt, cilantro, vegenaise) and cabbage salad (cabbage, tomatoes, cucumbers, radish, cilantro; dressing - apple cider vinegar, olive oil, salt, black pepper). This weekend I'm celebrating my 2nd year as a vegan.

I had my sister over for her birthday (even though it is technically tomorrow) and made her a nice lunch/dinner.

B: oatmeal and strawberries

late morning snack: almond milk yogurt

L/D: yellow split pea/carrot dip with olive oil, lemon juice, turmeric, garlic, cumin, salt/ground black peppercorn; matzo crackers for dipping; garden salad with lemon tahini dressing; almond milk and the birthday dessert was a homemade pumpkin cake with vegan cream cheese frosting....two women with a cake between them, it was dangerous but we controlled ourselves so I could save some for my husband when he got home lol.

What a nice meal! I am interested in your dip, as it has all my favorite things in it. You served it cold, room temperature, or hot?

I served it room temperature. I love split pea soup, and I often wondered how it would do as a dip. So I experimented a bit. I forgot to add that I steamed some carrots too and added those. I simmered the yellow lentils until they were well cooked, then added those with the carrots to my blender and added the oil, lemon juice, and spices. I used 2 cups cooked beans, three cooked carrots, 1/4 cup lemon juice, 1/4 cup oil and I never measure my spices so I just added and tested as I went along. I did have to add just a touch more water but it blended very thick and nicely. I left it on the table to cool and drove to my sisters and picked her up and by the time we got home and settled in to eat, the dip was slightly dry so I needed to add just a little more water and heat it so it was more creamy for dipping. It does dry out fast so that was a downfall. I am very careful about oil but I am guessing it could have used a lot more to keep from drying out. it was still wonderfully delicious though! The matzo crackers worked because they were nice and hard for dipping. Raw veggies would work too!

B - brekkie was scrambled tofu (with paprika, oregano & chilli flakes), tinned plum tomatoes, tinned baked beans, fried whole mushrooms, wholemeal bread with soya butter

L - whole avocado with lime and black pepper

D - leek and potato stew with parsley dumplings (onions, carrots, celery, barley, green lentils, veggie stock cube, leeks, potatoes, vegan 'suet', wholemeal flour, fresh parsley)

S - (maybe) fresh popped popcorn (from the popcorn man - it's his thing)
