Yesterday:

B - Toasted sandwich filled with sauteed mushrooms, vegan sausange, violife cheese and tomato sauce
Then I went to the West Midlands vegan fair and tried millions of nibbles of chocolate, cakes and the best ever jackfruit nachos; ate most of a raw 'creme egg'; drank fresh coconut water; ate a samosa on the way home.
D - Mixed salad and leftover pasta with nooch; Mahalo bar; vega cornetto

Bit of a junk food day :P I ate salad for breakfast today!

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...

Brunch: Went to Wendy's on a date with boyfriend and had a side salad hold the cheese as well as a medium french fry. Not the healthiest, but I don't go to Wendy's to be the healthiest.

Tonight will be taco night, but the details will come later.

Used tofu crumbles for meat. I find that you don't get the wetness from that alone, so I combined it with salsa, seasoning, and picked jalapenos.
Topped tacos with salsa, guac, daiya cheese, cole slaw cabbage (it's crunchier and so we prefer it), and taco sauce.

B: Cashews. My morning routine.

L: I made a vegan chili bowl for lunch: canned chili, hot sauce, way too many jalepenos, daiya cheese, crumbled chips on top then guac smoothed over.

I would have eaten the leftover taco night stuff, but omni boyfriend wanted it and I wasn't about to pass up the opportunity for him to eat vegan three meals instead of two. That's activism right?

Currently making (later to be eating) big batch sauce!! Giant pot to soon contain: three kinds of onion (red/white/Spanish), three colors of bell pepper (yellow/orange/red), sliced rainbow baby carrots, fresh mushrooms, garlic, garbonzos, baby spinach, no-salt diced/crushed tomatoes.... Gotta use up all this awesome produce!! LOL =)

Yesterday: B: rice cooked with one of my homegrown leeks and kale, and canned light red kidney beans.
L: my own homemade rye bread (seasoned with my own dill seeds... not the same as caraway seeds, but it worked... and I didn't grow any caraway). Fruit on the side. I forgot what I had for dinner....

Today: B: the same rice dish. NOM.
L: rolled oat muesli with soymilk and ripe Anjou pears.
D: ???? still thinking...

NOW I remember what I had for dinner Monday: some homegrown squash, baked, with more of my bread and some beans. And avocado with the bread.

I almost always have water to drink with my meals.

I'd like to try making a vegan cassoulet. I've read that there are MANY different kinds but that all cassoulets have beans and herbs.

I ate a lot of white flour today, which I don't often do.

B: 2 7-layer burritos no cheese or sour cream
L: homemade pizza with marinara sauce, tomatoes, mushrooms, olives, and red bell peppers.

My crust puffed up and crisped beautifully. All the same, I think I'll have salad for dinner.
