The one I've been using has both veggie bouillon and black salt which makes it just too salty. I've tried a couple others from cook books that weren't all that great/flavorful.

So what do you put in your tofu scramble? I mean as far as spices.

I saute chopped onions with the tofu in a blend of olive oil and earth balance...not a lot, maybe about a tablespoon of each. I like the buttery flavor from the EB. I am mostly a salt/pepper kind of person, so I don't use other spices. I do sprinkle some nutritional yeast and sometimes I add zuchini, mushrooms or whatever I'm feeling at the time. Diced potatoes are really good mixed in too...I cook them separately till they're nice and golden brown then add everything together.

For spices I usually only use a bit of thyme, salt and pepper. Then nutritional yeast, brown mushrooms and mild salsa.

ETA: VeganDad has a really simple recipe here:

I use about 4 T. water, 1/2 teasp. liquid smoke, 1 teasp. maple or agave syrup and simmer till liquid is absorbed and tofu is just golden. With onion, peppers and mushrooms if I have them.
Or just brown it in a little EB and salt and pepper and veggies.
Sometimes I like to thin slice it, saute in EB with a dusting of powder sugar.

Don't let the perfect be the enemy of the good

I recently made a tofu scramble for the first time. I sauteed some onion and garlic in a bit of oil, then added the tofu along with soy sauce, turmeric, and nutritional yeast. The turmeric gives it that great yellow color.

I use the post punk kitchen recipe for tofu scramble. It's pretty good.
