Breakfast: Green smoothie.


Lunch: Leftover mixed veggies with peanut sauce.


Dinner: Vegan colcannon and roasted brussel sprouts. Cooked at home, but served up at my sister's house on her gigantic plates. It's actually a good portion of food, but it looks so lost on such an enormous dish!


Snacks (not shown): Red grapes and pretzels.

I can't believe I never clicked on this thread before. There is a lot of great inspiration here as I look to add more recipes into my cooking rotation, and also work toward a vegan diet.

Breakfast: Seven grain toast with strawberry jam, grapes, orange juice, and coffee.


Lunch: Leftover vegan colcannon.


Dinner: Big salad with a lot of orange vegetables and an apple.

Breakfast: Brown rice with soy milk, raisins, and walnuts. Coffee.


Lunch: Big salad, chopped, and tossed instead of my usual composed salad.


Dinner: Rainbow chard with onions, brown rice, and mango bbq beans.

I've never taken photos of my food before, so excuse the phone camera and lack of skills. My lunch, garbazos, onions, and spinach with a tomato-ish sauce over a great black rice mixture.

I like Morningstar breakfast sausage because it has all the great things about breakfast sausage without the meaty flavor that I always disliked.

One of my big summer foods used to be an Italian sausage sandwich. I'd love to have a vegetarian version with the same spices.

I enjoyed it. It doesn't taste particularly "meaty" to me, but you definitely get the spices of an Italian sausage. I've had it before in a lentil stew and didn't love it in the stew because it got a bit mushy. I did like it with the peppers and onions. Very tasty and satisfying.

I don't have pictures of brekkie and lunch.

Brekkie: Wholemeal toast with jam and peanut butter
Lunch: Homemade veg soup with a vegan sausage roll
Dinner: Thai curry with wholemeal rice, steamed veggies, soy milk and cider (I know cider isn't vegan, I'm working my way toward eliminating it )

@Demosthenes: that sandwich looks delicious! I'm also interested in your breakfast shake. I've never heard of pea protein powder. Does it have much of a taste to it? Did you mix it with some kind of milk or with water?

It doesn't have much of a taste, but it is chalky like most protein powders. I mix a scoop with a cup of soy milk and about two cups of cold coffee. It works out to about two jar's worth each morning. I use it because I'm trying to lose weight and maintain lean muscle mass. A serving has about 28g of protein which means I don't have to worry about getting enough protein in my other meals. I try to get about 20% of my calories from protein each day, and this really helps. There are many vegan protein powders out there. Soy is the most popular, but since I already consume soy milk and tofu I figured it would be best to get it from a different source.

Yesterday's Cinco de Mayo dinner. Seasoned pinto beans (soaked dried beans cooked in water with liquid smoke, garlic, balsamic vinegar, liquid aminos, hot sauce, bouillon, cumin, paprika and basil) served over a bed of lettuce and tomato and topped with sauteed zucchini, mushrooms, red bell pepper and salsa. The beans were amazing. I was really pleased.

That looks so fantastic! I get so many ideas from your posts!

I went to a local music fest yesterday and brought a watermelon cut fancy and hollowed out with fruit salad inside. Also brought a 3 bean salad type thing with garbanzos, red beans, navy beans, green beans and a red wine vinegar and olive oil dressing. Someone else had vegan tofu dogs cooked on a separate grill.

breakfast was fruit while making the salad, lunch/dinner was at the concert, and several beers.

And my friends/relatives playing music were all fantastic.

My brunch today was purely a hangover cure (too much vodka last night...eurgh!)
That's two vegan burgers with 'cheeze', soya yogurt and chocolate soymilk.


Mid-afternoon snack - green tea, smoothie and melon


Dinner was healthier than lunch - stir fry with whole-wheat udon-noodles.


All I wanted was fatty food today, lol.
