I'm trying to make vegan cupcakes for my daughter's birthday party this summer. I know I need to order "Vegan cupcakes take over the world" for the cupcake part, but what about icing? Are there recipes in there that don't require special substitutes? I have access to soy milk & tofu here, that's it. I also ordered agave syrup and egg replacer online (but would rather use fruit sauce in the cupcakes if possible, never tried though.)

Also, what about food dye? Since I'm not vegan yet, I'm not sure which of the ingredients are ok when it comes to the letter and number combos. I'm hoping to use girly colors for the icing, so does anybody have any recommendations for coloring whatever icing I end up finding a recipe for?


Any help would be greatly appreciated. Thanks!

I've made cupcakes out of this book before, and icing. The recipes are made so you don't need any very 'weird' ingredients. It does call for soymilk and vegan margarine, but thats the only subs you should need.

Icing recipes are at the back of the book.

Oh yeah, we do have vegan margarine forgot about that. Only in a tub though, not stick.

I meant to post this in the food discussion thread. If any moderators can move it, that would be great. Sorry about that.

I recently watched a video about a raw vegan chocolate raspberry cake, she used avocado to create the frosting, I could go see if I can find it if you are interested, I think was avocado, raw cocoa and something else can't remember.

Also I saw how to make whipped cream with coconut milk, the type in the can, placing the cans in the refrigerator, then punch a hole on the top to drain the liquid part and used the fat thick part to whip with powdered sugar and vanilla, he used 2 cans, chilled the mixing bowl and beaters like for a regular whip cream.
