I see it written like this often with an asterisk instead of an "a"; thanks!

It's a way of referring to both veganism and vegetarianism at the same time. So a veg*n is a vegetarian or a vegan, without having to type it all out.

Oh that makes sense. That's how asterisks are used in search engines too. I just never thought about the use of an asterisk in the middle of a word.

I think it would be best to just get rid of the word vegetarian, and only vegan exist. That way, youd either be someone who doesnt consume animals and their products (vegan) or someone who does.

Vegetarian gives the impression of someone who "loves" animals and doesnt want them harmed. That is far from the case.
