Just wanted to say "hi"! I'm new to the boards. I'm a new vegetarian as well (wow, it still sounds strange to say!). Today marks 3 weeks since I last ate animal flesh. I still use dairy and eggs (not intentionally - I don't eat scrambled, etc. but I haven't taken the plunge of avoiding them in baked or other products - in time, though).
Initially, I started this for health reasons after realizing how not eating meat made me feel physically and mentally; it was really a by-product of cutting out all the processed foods and eating only whole foods as a way to get healthier and lose weight. Then, it quickly turned into ethical and environmental. At some point, I may go vegan, but for now, lacto-ovo is the perfect step for me.
