I never thought I'd be a vegetarian or a total vegetarian. Well, I was diagnosed with Behcet's Syndrome end of last year and I have terrible fatigue. I don't want to just "cope" with the disease. Luckily my symptoms are mild and I respond well to medication, but I want to do more. I got a Groupon to go back to a yoga studio affordably (like I did before I had my twins and went through until 31 weeks of pregnancy - I was just too big and tired after that - in 2007)...and going to a total vegetarian diet. I've only been on this diet since Sat. Actually Sat. I had cheese (veggie lasagna). You know what, I've heard that dairy contributes to allergies and I have a mold allergy, so I feel a LOT better after going dairy free Sunday. It's not as bad or hard to make the switch as I thought it would be. These days there's lots of good recipes and grocery stores carry so much vegetarian that it was easy shopping. The last couple of mornings I haven't felt like I was dragging as much. Don't get me wrong, the fatigue is there, but I'm already noticing some differences. I'm glad to have found these boards!
I had to look up Behcets syndrome- it sounds awful. A vegan diet certainly will help with inflammation, as well as many common spices. My arthritis has improved. Dairy is also a factor in all kinds of allergies, and asthma, I can also vouch for that!
