The "Ive Only Got 20 Minutes To Make Chili" Recipe

This recipe is suitable for a: vegetarian/vegan diet.



1 can pinto beans

1 can kidney beans

1 can black beans

1 large can pureed tomato

1/2 cup frozen corn

1/2 fresh spinach (optional)

Chili Powder and Onion Powder to taste



Pour tomato and beans into a pot over medium/high heat. Let simmer for 5 minutes. Add the spinach and cook for 5 minutes, stirring occasionally. Then add corn and cook until corn is tender. Take off heat and add the spices. Allow to cool, then serve with french bread or some other hard bread.

Additional comments:


Frozen spinach also works. You can add some tomato paste to make it a little more soupy. Tweak it however you want! Its just meant to be a quick tasty recipe. It also refigerates and makes awsome leftovers.

Take out the corn, and I've made this. Also, if you like it spicy, you can try substituting a can of Ro-tel tomatoes for the pureed ones.
