Hey,

I was just wondering if you can simply combine packet Soup Mix ("lentils, peas, barley and flakes") with a vegetable stock and possibly some leftover veg? Thank you.

I couldn't imagine why not. It actually sounds pretty good to me.

You can do that. Add spices and herbs like cumin, oregano, thyme, sage, rosemary. And onions and garlic for more flavor or it will be very bland. Salt too.

I also use tomatoes (canned or fresh), some paprika, pepper and soy sauce

I have great luck using my crock pot when cooking bean soups. I put it together with the spices the night before, leave it off for the beans to soak up water and in the morning I turn it on low when I go to work & come home to amazing smells and a delicious dinner. I add all kinds of stuff depending on the beans. Garlic, ginger, bay leaves, thyme, sage, cumin, onion, cinnamon, paprika- I mix & match. I almost always use veggie bullion cubes and pink salt. Sometimes instead of salt I use aminos. I love soup. Its one of my favorite foods, next to curry. :)

UICK & EASY TORTELLINI SOUP

1 pkg. frozen Tortellini (cheese)
1 can Campbells soup (your favorite)

Suggestions: cream of mushroom, tomato, cheese broccoli, cream of broccoli.
Cook tortellini per package directions. After draining water, return tortellini to pan. Add soup and desired liquid. If you like cream soups thick, add just half the milk amount. If you want it a thinner consistency, add full amount of liquid. Heat, salt and pepper to taste, serve. Quick and easy.
