Kitchen Sink Soup

This recipe is suitable for a: vegetarian/vegan diet





Preparation Time: 120 minutes

Serves: oh god, it lasted me 7 meals.. so i guess 7 0r 8





Ingredients:

Tomato Puree

Tomato Juice

2 small cans or 1 large can of mixed veggies

Carrot Bunch

2 potatoes

1/2 cup of peas

1/2 can of pinto beans

1/2 Can of green beans

1/2 onion

A few stalks of celery

italian seasoning

salt/pepper

Red pepper flakes





Instructions:

Peel carrots and potatoes, then bring to a boil in water for about 15-20 minutes or until tender



While they are boiling chop all of your vegetables



After carrots and potatoes are boiled, drain.



Put about three-four inches of water in a large pot and heat to about 8 (medium-high) Then pour in tomato puree.



Pour in all your canned vegetables. don't drain them!



Now after all you have put all your veggies in, pour in as much tomato juice as you want. (it all depends on how "soupy" you want it)



Season with salt, pepper, italian seasoning, and red pepper flakes to taste.

Bring to a boil for about 6-7 minutes, then turn heat down to around 4 (medium-low) and let simmer for at least two hours. That's what makes it good.

It will be good in fridge for 3-4 days. In freezer for a good long while.
