Classic Coleslaw

My hubby is a huge coleslaw fan. Today I posted the recipe I've been using the last 30 years on my blog. It's simple and egg free. Anybody else got a good slaw recipe? I know some people add dill, celery, etc. but I keep mine very simple. Even my non-vegan family and friends love it and have no idea it's a much healthier version.

Perfect for potato salad too, with celery and chopped peppers!

I've been without store bought vegan mayo for quite a while and now I may not buy it after all.

The eggless low-fat mayo in this recipe is surprisingly good. I've always been quite picky about mayo. I loved the Veganiase, but it's SO high in fat. When I tried this low fat recipe, I was very skeptical, but pleasantly surprised. And it's very easy to make. It's not commercial bought, but I really like it. I use it on sandwiches, pitas, veggie wraps, and in other recipes. Hope you like it too!
