I know I'd love these. My favorite potato salad recipe is in one of Anna Thomas' cookbooks: cooked potatoes and carrots cut into chunks, with a simple,dressing of olive oil, dill, lemon juice I think, and garlic.
potato + dill = EPIC WIN.
