TVP Burgers

This recipe is suitable for a: vegetarian diet

Preparation Time: 30 minutes

Serves: 8



1 TBS olive oil

1 onion, chopped

3 cloves garlic, minced

1 heaping cup dehydrated TVP, reconstituted with 3/4 cup boiling water

3/4 cup Italian bread crumbs

1/2 cup Parmesan grated cheese

2 TBS dried parsley

1/2 cup Egg Beaters



Boil water, reconstitute TVP, and set aside--let sit for at least ten minutes

Chop onion and garlic very fine in food processor

Sauté the onion and garlic in olive oil

Place TVP into food processor, and process until it's almost a paste, with a few larger chunks remaining

Add sautéed onion and garlic to food processor with TVP and process until will mixed

Add all ingredients (including TVP/onion/garlic mixture) in bowl

Mix very well with your hands

Shape into eight patties

"Fry" in a scant amount of olive oil

Most of my meatless burger recipes call for beans of some sort. I don't really like beans all that much. I have one black bean and rice burger recipe that I can live with, but I needed some variety. I also wanted a burger that I could make with ingredients that I always have in the house. So I went on a quest to figure out how to make a meatless burger that didn't involve beans. I LOVE Boca Burgers, but they are so expensive, and I'm not all that fond of the preservative aspect of pre-made burgers, and they have WAY too much sodium.

Through much Internet research, a lot of improvisation on my part, and even more trial and error, here is the end result.

I even figured all of the nutritional information for anyone who cares.

You can make these and serve them immediately, but the best part is that they also freeze beautifully (cook them first!). Wrap each patty in waxed paper and then seal in a freezer bag. When ready to use, take straight from freezer and place in sprayed frying pan over medium high heat. Cook about four minutes per side.

I'm awfully proud of this actually!
