Avocado and Kale Sandwich

Category: Sandwiches/Burgers

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 5 minutes

Serves: 2 Sandwiches

4 Slices of Sprouted Bread (because sprouted breads aren't flimsy like Oroweat per say, and hold together well)

1/2 an Avocado

A few pinches of salt

5 leaves of kale (something around a half of a bushel of kale)

1/4 cup of vegetable broth (to cook the kale in the frying pan)

This is pretty simple, but always turns out good. And when i happen to have both kale and avocado in the house, i lick my chops and make a sandwich.

So first you cut open an avocado and soften it into spreadable form. Then you get some kale, however much you want to eat, and chop it up, and with some vegetable broth, you sautee it in a frying pan until the kale diminishes in volume. While you are doing that, toast some bread (I use TJ's Organic Sprouted Wheat Berry Bread, the one in the green and blue packaging) usually 4 slices, and when the bread toasts, you spread some avocado on one slice, add the hot, steamy kale (drained), add some salt, and cover it with the other slice and eat. Then do the same for your 2 other slices of toasted bread. Like i said, this is really easy to do, and if you really like kale like i do, then you will surely like this combination.
