Parmesan Crusted Veggie Sandwiches

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 10 minutes

Serves: 4



1/4 c Smart Balance or vegan margarine of your choice

1/4 c soy parmesan cheese

salt and pepper to taste

8 thick slices of firm bread

2 tbs Veganaise

1 1/2 tbs Dijon mustard

2 avocados,sliced

1 medium tomato,sliced into 12 thin slices

1 small red onion,sliced

1 1/2 c alfalfa sprouts


Soy bacon strips (if desired) cooked till crisp



In a food processor or small bowl,blend margarine,parmesan,salt and pepper;

spread some of mixture on one side of each slice of bread. Grill slices on a non stick pan on med. heat until crisp and deep brown. Set aside to cool.

Next, blend Veganaise and Dijon.

On a piece of toasted bread,spread a layer of mayo mixture and top with lettuce, bacon,avocado,tomato,onion,and sprouts.

Place another slice of toasted bread on top.

Additional comments:


I use sourdough bread because it holds up well. Be sure to keep an eye on your bread while it's toasting,and check frequently.

My omnivores love these served with baked potato chips and big glasses of iced tea.

when you say "bacon" are you referring to some kind of bacon substitute? I'm not really familiar with all of these meat substitutes.
