Easy 'G-Z' Burgers

Suitable for a: vegan diet





Ingredients:

These are a variation of a recipe I found online a year or so ago... I admit I changed the actual recipe a LOT but the name was cool so I kept it.



1 can garbanzo beans,

1 medium zucchini (or yellow squash or potato or yam), shredded

1 Tb. ground flax seeds, ground, mixed with 1 Tb. soymilk 'till 'gooey'

handfull chopped fresh parsley

2 garlic cloves, minced

1/2 red bell pepper, minced finely

salt to taste

pepper to taste (I actually really like lemon-pepper in this!)

handfull fresh oregano, chopped

1 teaspoon curry powder

1 tablespoon whole wheat flour





Instructions:

In a bowl, mash garbanzo beans with a fork.



Stir in the shredded zucchini (or whatever veggie you use), season well with the salt, pepper, parsley, garlic, oregano, and curry powder, then stir extremely well.



Stir in the egg substitute.



Add the flour a teaspoon at at time while mixing, until mixture is able to hold the shape of a burger patty.



(After this phase,I put the mixture in the freezer for about one hour so that it becomes firm - this helps a lot)



Shape into four large patties, and sautee in the oil in a skillet over medium heat until both sides are golden brown.



Serve over whole wheat buns, or alone with flavored rice on the side.
