Old Time Tomato Sandwiches

Suitable for a: vegetarian diet



crusty bread (2 slices per sandwich) ~ Rye and Sourdough are my favorites so far

thickly sliced tomatoes (enough to cover the bread, edge to edge, in one layer)

1/3c mayo

1/4t lemon zest

1/2t lemon juice

1/4t cumin

1/4t salt

1/4t pepper



Begin by toasting the bread. While toasting...

Mix mayo with lemon zest, juice, cumin, salt, & pepper.

Spread mayo mix on bread, add tomatoes, top with bread and cut in half or quarters.

version 2:

use only 1 slice bread per sandwich, spread on the mayo, add tomato, and top with cheddar cheese. Broil on High for a few minutes until cheese is melty and golden.

Additional comments:


SUPER easy and fast, great for a warm day outside. Perfect with strawberry lemonade to drink~

Interesting. Up til now, my old time tomato sandwiches only involved good bread, tomatoes, a little salt, and waaay too much vegenaise. I think I'll give your version #1 a try. Thanks!
