Delicious Black Bean Burgers!

Ingredients:

1 can of black beans
about 10 baby carrots or equivalent in regular carrots
1/2 cup chopped bell pepper (any colors)
1/2 cup chopped onion
1 1/4 cups medium salsa (I use President's Choice brand-it has corn and black beans in it)
1/2 cup mild salsa
2/3 cup bread crumbs (Connella brand is vegan)
1/2 cup ww flour
1/2 tsp black pepper
chili powder to taste
Optional:
red pepper flakes
curry powder
cumin
paprika
hot pepper sauce
Instructions:

Preheat oven to 425 F.
Mash the beans in a medium-sized bowl (it's easier if you heat them up first about a minute). Steam the carrots in the microwave for 3 minutes and mash them with the beans. Add the peppers, onions and salsa, stir. Add the breadcrumbs, flour and spices and mix well. Form into patties and place on a cookie sheet. Bake for about 17 minutes. Cool a few minutes before taking off the cookie sheet. If they are still mushy and/or fall apart when you take them off the cookie sheet, bake them an extra couple minutes. Enjoy, they are very good!

Makes 8 burgers, or 9 if you don't want them big. Freezes well.
Serve with lettuce, tomato, avocado and extra salsa on a bun. Or you can be creative and put anything else you can think of, I've even used sweet potato slices!
You could also make these into "sausages", add into a tofu scramble or bake on a pizza.
