I've always used tofu pressed, thinly sliced, and baked in a marinade of liquid smoke, braggs, a bit of maple syrup and enough water to halfway cover. Bake at 300F, for 15 min. flip, bake till dry.
I do love the idea of mushrooms for this! I think I'll try just the ****akes next time! I'd still do the smoke and sryup though, I love that smokey sweetness!
Just a note- I love tofu, but not after freezing! I only say this for people who may have only tried tofu that way! I thought I hated it's texture, but it was only after being frozen. I know many people who feel just the opposite!
